Taco Rice. A Japanese "Tex-Mex". A fusion of Japanese and Tex-Mex cuisine.

In this video, we are going to make a tasty dish called, Taco Rice, it’s actually a Japanese dish, inspired by Tex-Mex food.
It was invented in the early 80’s in Okinawa Japan, to cater to the taste buds of US military stationed there, since Texas-Mex or Mexican food wasn’t really available in Japan at the time.
These days you can find Taco Rice in many places in Japan since it’s a popular and tasty dish, and it’s one of my favorites.
It’s pretty easy to make and in this short video I’ll show you how.
P.S. - Although I forgot to mention this in the video, you can replace the rice with macaroni and make Taco Mac!!!

Ingredients (Should be enough for 2-4 servings):
• Ground beef, pork or any ground protein or meat alternative (approx. 440g/1 lb)
• Chili/taco spices (1 tablespoon)
• Tomatoes (1 large, diced/chopped)
- Use 1/2 in meat mix when cooking, other 1/2 as topping on the final dish
• Diced onions (1 medium, diced/chopped)
• Lettuce (1/2 head, shredded)
• Shredded cheese (1 cup)
• Cooked Rice 2 cups (white is what is typical in Japan, but any rice would do, IMHO.)
A portion for a serving
could be 1/2 to 1 cup of the cooked rice.
See below on how to cook white rice.
Optional, but essential to many:
• Salsa
• tortilla chips
• guacamole
• sour cream
• beans
• jalapeño slices
• refried beans
• Mexican pickled onions
• diced white onions
• sliced black olives
HOW TO COOK RICE (I'll leave this here until I make a video on this) Comment if such a video would help.
Note: 1 cup of uncooked rice should make 2 cups of cooked rice, but this recipe will cook with 2 cups of uncooked rice to give you 4 cups of cooked rice.
Wash and rinse 2 cups of uncooked white rice a few times to remove excess starch.
Put rice in a pot that should be about double the height of the rice in the pot as the rice will expand and you will want to have enough room in the pot for the cooked rice.
For 1 cup of rice add 1 cup of water, so 2 cups of rice will need 2 cups of water in the pot.
Make sure the rice is level in the pot with the water.
Bring to a boil and then cover with lid and lower heat to simmer for about 15 minutes.
Turn off heat. Leave the cover on and let sit for 10 minutes so the rice softens and settles.
Open the lid and mix the rice with a spoon and it’s ready to eat, so put some of this on a plate and make your Taco Rice!

Oh yeah, I've had my share of eggs on top of this. I prefer something closer to classic Tex-Mex ingredients, but there can be a lot of different stuff this goes well with.
