Think you can replace 7g of flour with matcha powder. The flavour will be light, adding more will change the ratio of other ingredients. No extra sugar needed for ceremonial grade.

this is so far the best castella video I come across. I have 2 questions here 1. what if I need to add coffee or cocoa powder, do I need to minus off the grams from the cake flour, and 2. if I need to bake a larger cake 3 times the size, does it mean I just multiply all the ingredients by 3X and is there any changes to the oven temperature, appreciate much.
Thank you for the compliment! You can adjust the recipe by 15g cocoa powder and 45g flour, while you might need to add 5-10g milk because cocoa powder takes more moisture. And notice that you should sieve cocoa powder first, mix, then add in flour. As for 3X larger castella, I didn’t make this big size before, so I can only tell you what I think. You’re right about ingredients. And it might take 1hr10min baking time with 10-20degrees higher. My suggestion is you try the original recipe first, then gradually larger the amount.
Hi, oven at 150°c, after putting cake batter into oven, temperature will drop to 120°c, should i quickly adjust oven temperature to 180°c to bring it up to 150°c asap ? Thanks. I'm new to baking
