They werein the shit because the leadership sucks. They serve 300 head there in 2 kitchens of ten staff, or 20 cooks (they are not chefs). I've served 300 off a line with 3 cooks and a pantry person with a similar, simple menu. They should never give up, correct. That is part of the game of being good in the kitchen. But what they were screwed over is the leadership does not lead. He puts them where they have to fail.

I honestly can't believe it either. I'm not one of the people who hates her with a rabid ferocity like I've seen in some comments, but I also don't get people who think she's super sweet. She's pretty and *acts* nice, but it comes off as surface-level to me. I also think she cheated during the blind taste test. It seems like she could hear and knows how to put up a front. This is an outstanding display of genuine leadership from Gordon. He is obviously a great teacher but when a customer from the other side comes to attack the team he constantly berates, his chef's are completely defended from the attack. Gordon is the gatekeeper from both directions.

I like that Scott just.. Knows. Whatever is going on in the blue kitchen he is well aware of it. Even when just passing by and giving things a glance it just takes him a few seconds to immediately know the exact situation. He was an unsung hero of the blue kitchen.
