I would put the caramel pecan sauce in the bottom of the baking dish and then put the rolls on top and bake. Flip out on parchment when they are done baking and still warm.

Now take that same cinnamon roll recipe but add 1/2 gallon of keto friendly ice cream (vanilla or chocolate) and place in a cake pan and bake at 350 degrees until toothpick comes out clean when testing (check around 25min mark, and recheck at additional 5-10 mins depending on your oven. When finished, allow to cool and then top with your pecan brown sugar mix and then you have monkeybread. My father-in-law makes a non-keto version every year for Christmas morning breakfast.

I can't roll a rectangle with dough to save my life. I have found a way to help somewhat correct those wonky ends...when you get the dough rolled out, lift the top parchment. Then use the bottom sheet and fold over the wonky ends to square up the dough. Place the top sheet back on and finish rolling out the dough. But I still bake the ends. I call them my sample pieces. Y'all did a great job! Love your channel and Victoria also.
I make these all the time! I also do a "sausage roll" version...use melted butter and crumbled browned sausage and roll it up. 😋 I make both of these every weekend, so daughter can eat these at breakfast on way to school 🙌
You leave out the cinnamon? I am thinking it might be worth it to add a bit off maple flavor either to the sausage when cooking or to the butter, and a bit of swerve to get a macgridles type thing.

For proofing a yeast dough when I don’t have a proofing oven to put it in, like you, I will put it in a pre-warmed oven, but then I also will add a saucepan full of boiling water to the oven with it. That helps to maintain the oven at proofing temperature for a successful rise.
I'd like to try this recipe someday. When handling sticky dough, i like to put on disposable gloves, spray a little nonstick cooking spray, rub it between my hands then work with the dough. Or if you dont have gloves just spray it on your hands. 😊 Yes please make a keto fig newton! 😃

I made Victoria's Keto Kitchen Cinnamon Rolls for Thanksgiving and they turned out great! Many non-keto friends loved them and couldn't believe they were Keto!
small suggestion? Try making the keto pecan topping using allulose as your sweetner since as you heat it, it turns into a syrup and stays soft - does not crystallize
These look SO good!! I'd love to see you try her keto pizza crust - I tried 3 times and it flopped each time. I am determined to make it work, though! I just bought a stand mixer (not a Kitchen Aid!) so if this doesn't work, hubby might be a bit miffed at all the products I bought for this!!!
I have made these and they are really good on the first day. They tend to get firmer after cooling down. Even after warming them in the microwave or toaster oven, they are not as soft as immediately baking. And, of course, they are not as spongy as the original.But, they do hit the spot after so may years of not having any. Of course, its a trade off and certainly better than 146 carbs!!!!! WOW!
If your over the stove microwave has incandescent lights, turn on the lights before you start. Then put the bowl in the microwave without turning it on. The heat from the bulbs warms the inside of the microwave, and because there is no drafts inside it will also work as a proof box.
Hand mixer....I have a kitchen aid stand mixer ... but... I use my hand mixer ALOT! Just stick it in a drawer and pull it out when needed. Much easier than dragging the big stand mixer out... This recipe looks great... bet that if you chopped the zucchini from the mock apple pie real small and made this dough, you would have great apple rolls too....
Great job. I just watched Victoria's video today. If you put the filling to the edges of the dough and have rolled into a rectangle you won't need to toss those ends. Keep making videos. So good. Sue

Those look fantastic, as do ALL of Victoria's delightful creations😋 Just found her channel a few weeks ago and I'm really enjoying it~ she's such a lovely human, & she is gifted at teaching others, imho. Since the beginning of my baking years- decades ago- I have always made my cinnamon rolls into pecan sticky buns. I also use nutmeg, & about half the cinnamon, which is personal preference as I'm not a huge cinnamon fan~ although some things just need it, & it's yummy. *If you want to have "brown sugar" allulose, you can whirl in some molasses or molasses extract & voila'~ you have brown sugar that won't crystalize. That's basically how old school, processed brown sugar is made as well.=)

Dental floss works for cutting. My g'gran & gran made "vinegar rolls" ... over the rolled/cut cinnamon rolls laid in pan, she made a simple syrup of "sugar", white vinegar, melted butter, a bit of water ... pour it over the cut rolls and bake until mostly absorbed. Gotta look up the recipe and try to KETO-ize it!
I think I need to try these to take to a ladies brunch soon; everyone brings a bunch of crazy carbs and it’s just insane. I also love KetoSerts’ Cinnamon Coffee Cake, which would be great for a holiday breakfast spread. You should also try Serious Keto’s granola. It tastes just like the one you can buy at Sam’s Club in the white bag, and it’s REALLY easy. I love it on yogurt with Lakanto maple syrup. 🤤
I would like y'all to try my low carb cornbread recipe. 1 cup Carbquik 1/2 cup almond flour 1/4 cup cornmeal 1/4 cup oat fiber 2/8 cup sweetener (optional) 3 tsp baking powder 1/8 tsp salt 1 egg 2/3 cup unsweetened almond milk 1/2 cup oil (I use avacado oil) Sweet corn extract (amount will depend on brand and taste) I have Kitgen and I use 2 tsp. Bake at 400 for 10-12 minutes. Makes 24 mini muffins My calculations are 1.7 net carbs per mini muffin

They need a very specific hint that includes exact brand, model and color. Plus location to purchase. There are too many options for them to guess about it. ❤
No proofer? Do you have an electric oven with a drawer at the bottom? That is the proofer or warmer drawer. My mother used it to store cake pans, cookie sheets and such, so do I. (none of those tall narrow cupboards in her kitchen) For warming we used the oven too. It's easier to put your pan or bowl in there, it's higher off the floor.
