@@COBRAC0MMANDER I beg to disagree, its not just because a Filipino cooks a filipino dish automatic its legit filipino dish; you have to heavily put into account the availability and accessibility of the products, you cannot expect you'll be easily able to get local pinoy ingredients at an Asian/Filipino store in the US, Canada, Europe etc. A Jollibee champ in the Middle East will taste totally different from a Jollibee champ in Manila

Sana lahat ng mga Pinoy na nenegosyo ng pagkain all over the world kung saan mn sila napadpad is sarapan talaga pagluluto may it be the authentic taste, fusion or may twist. Kasi iba base ko lng sa experience ko sa ibang pinoy na nagbebebta- nakakadismaya ang lasa parang their aim is makabenta lng they dont think sa next kung may bibili pa, it will also misrepresent the Filipino food. Kung di ka Pinoy or di pa nakakatikin ng Pinoy food, aakalain talaga di masarap ang Pinoy, kung first impression pa lang di maganda, di na ma e recommend or d na bibili. The truth is, I was frustrated with how ang mga matatanda cook the traditional dishes. I called it CAVEMAN STYLE. They just boil water, then dump everything, turning out pig slop. The worst part, they take such proprietary attitude of their recipes not revealing "secret " ingredients which turned out to be LOADS OF VETSIN. There is science and chemistry involved in cooking. Since you talk about sautéing, you are perfectly on point. My son, I'm proud to say is a scientist researcher , with background in Organic Chemistry. The Chinese cooking technique of stirfrying with minimal oil probably practised for thousands of years in their cuisine history got me incredulous.That is, when my son told me that the WAY all cultures in the world cook their food traditionally is all wrong , ignorant and wasteful except the Chinese, how did they know ? There's a few reasons totally overlooked by homecooks. Blame it on an educational system the world over that teaches only ABSTRACTS but not APPLICATIONS. One glaring fact , certain important nutrients are FAT SOLUBLE, in edibles , veggies , fruits , can only be utilized , digested and absorbed by human guts through searing, sautéing or in combination with fat or oil. The common aromatics like onion , garlic ,spices , etc , its fragrance are released upon contact with hot oil. You are right , sautéing and searing aromatics and veggies caramelizes the natural sugars of these ingredients , brings out their unique flavors, but best of all releases the vitamins , minerals and nutrients to make it available for our body. Example ? Vit A, D, E ,& K. We may not have to take vitamin supplements if we know how to cook right.
