Actually, that's a bit of a misconception about Tankman. It's actually Gear 4th, Stuffed Version: Tankman. As in, it's the only version.

Some people actually thought at the time when first watching this scene that due to Luffy's phrasing that the name of his Tankman attack was: Gum-Gum "Fly away to the end of the New World" Cannon Ball!!!! They probably should have tried to fix the dialogue phrasing transition positioning when this scene came to the anime

Not really this was a situational gear so of course he wouldn't be able to do it again unless he over eats. Luffy doing this form in gear 5 might work but wouldn't make a difference since Luffy can't attack if he was put on the defensive tank man would be way stronger against attacks than in gear 4

Since we're on the topic of defense, I don't think people realize Luffy's durability isn't that far off from Kaido's. Luffy took just as many hits from Kaido as Kaido did from him and he brushed it off. Kaido is dominating gear 5 when he's giving his haki speech, and Luffy still survives.
