Craig, thank you for the response. Keep doing what you are doing. The videos are very helpfull. I have been extract brewing for a couple of years, and it works for me. It gets too hot here in the south to do an all grain 60-90 min boil during the summer. Thanks again.

Glad the kegging is going great for you. Great work! What I do is, once the beer is exactly the carbonation I want, getting the head exactly like I want, then I shut off the CO2 except for when I want to pour a brew. This keeps the beer consistant. If I leave the CO2 on 24x7 after it's perfect, the beer keeps absorbing CO2 til the head goes way overboard. And yes, all my beers since kegging have a great head, totally differently than when I was bottling. Cheers, keep 'em coming.
Hey Craig, I was considering going Canadian and trying a homebrew with maple syrup. After watching your video, I decided not to and instead bought some specialty grains, they were actually used in Stouts but I decided to use them in a Coopers Real Ale. I ended up with a bit of a brown ale, really nice drop. So thanks for vids, saved me from a wasted batch. :-)
A friend of mine got the same setup for make carbonated water. I'll watch your video when it comes out and have two kegs. When one empties, then it time to brew again.

Hi Craig. Like we said, once you keg you will never go back to bottles! There is your proof. Yes I think you get a better head when you keg, also you will find with practice you will have better carbonation control as well. Glad you first kegged beer came out so good. I think with bottles too when you prime them you get the yeast active again, before it becomes sediment in the bottom of a small bottle size quantity of beer. In a keg you still get the sediment a bit, but not much in each pour.
Bottled my variant of this beer yesterday. I was really sceptical but after watching this I'm really looking forward to tasting it in a couple of weeks :)
You could always try Fennegreek for a maple syrup-like taste. I have used it a couple times and it really imparts a decent flavor. The Fennegreek is non-fermentable and you can often find it at Indian food markets. Also try searching through "World Market" if you have one nearby.

I am currently brewing the Coopers Dark Ale with 1 lb Dextrose and 1 lb light DME, 5 gallons like you did, racking into a 5 gallon coke keg for quicker time to turn into water again. ......Cheaper than Sammy Smiths for sure!

6 years plus alot of videos I have been going back to the old one you posted hope you read this Craig. Been doing and only coopers kits for about 6 years now have you tried priming with maple syrups vs brewing with them and I just started kegging and not going back unless it's a beer I don't want 19lts of a stout lol. Using just dark brown sugar for a long while really like it and sometimes adding molassas to the mix as well. cheers 17. going to do a honey ipa with honey as prime sugar but hopefully have the camera running and will post it :)

Firstly--I hope your son is recovering nicely. Welcome to the kegging converts, Craig. Wait till you throw a Stout on there! Pure Guiness head. I have 3 kegs on picnic taps in a 7.0 cf chest freezer--stout, honey weizen, and an Extra Pale Ale. All are fantastic. My first kegged beer, a cream ale, got blown away in no time it was so good. Now, if we can get you into the unhopped LME/60 minute boil/grains and hops regime, your aaaaaaaaaaaaahhhhhhhhhhhhhhs will get louder and longer!

I picked up the Dark Ale kit and planned to substitute 2.2 pounds of Amber DME instead of the sugar. Do you think that this will create a similarly good results as you have found? Keep rockin my man!
Nice, Craig. Just wondering because you mentioned a yeasty flavor when you tasted it before kegging, did you rack this one to a secondary? Seems like it might be a good idea now that you're in to kegging and don't need the yeast hanging around to aid in carbonation.
@CraigTube The recipe I saw mentioned in a video used part maple syrup and part sugar. He also added a single cinnamon stick for 1 gallon. He says it tastes like an apple pie! Ciderup.com is the site.

Craig told you that Coopers Dark ale is good stuff! I made it in bottles and it clears fast! I like your keg set up is it a cornelious keg? I have tried plastic barrels and I could never get my beer fizzy enough!

@CraigTube Thanks Craig....well I came home last night and glad I checked when I did. My Airlock was full of beer and the top of my fermenter was about to blow off!!!....I immediately switched over to a blow off valve set up and it is bubbling away as we speak. I wonder if there is any truth to the fact that DME substituted for sugar leads to a more aggressive fermentation? anyhow...thanks for the info. Cheers
@PeiHomeBrewer The taste was just yeasty that's all. I used the brew belt to get a constant temperature. If I don't use one than at night my brew gets to around 18-19C than in the afternoon it gets around 23C. Will the flux in temp affect the brew? (No its not in the sun or anything just how my house gets). How did you brew your English bitter? You said 1kg of DME, but did you use any sugar? I want to make the EB next.

I´ve been brewing beer for about 10 years (or more). Sorry about my English...and you´re blody all right there´s no way to do a great beer bottled. You have to make one into a keg. It smells and tastes really better. I don´t know why. But It´s a fact. Thanks from Argentina for your videos. They´re great. see you. Sergio
@PeiHomeBrewer Hey PEI I just opened up another bottle and it tasted 100 times better. No yeasty taste at all. Maybe the last bottle I had I stirred up the yeast before I poured it. Anyways thanks for your help.
So craig after brewing the coopers dark ale and letting it sit in the bottles for a month I finally tried one, but it tasted very yeasty. Did I do something wrong? I fermented it for 6 days at around 24C (I used a brew belt). And I used star san to sanitize everything. Please let me know.
how do you get your beers to look so clear with just bottling? My friend tried a home brew and he always has some sediment in his glass after he pours.
gday craig and tubers i got a coopers dark ale and i added the coopers light malt to it 24 hrs later i got my airlock blowing out it seams the yeast is very active iv heard of mates of mine this happening just a ? did i do something wrong or do i have a good brew going? love your work craig pissed myself laughing at your taste test :)
