📝 Ingredients
1 Meat from rotisserie chicken
2 links Andouille sausage, cut into small chunks
2 Tbsp Bacon drippings
1 very large sweet onion, diced
1 red bell peppers, diced
1 yellow bell pepper
2 orange peppers
1 - 28 oz can of diced tomatoes
1 - 10 ounce can diced tomatoes & habaneros
1 - 10 ounce can diced tomatoes & chilis
2 - 8 oz can tomato sauce
4 quarts Chicken Broth/Stock
2 Tbsp Cajun Seasoning
2 Tbsp Black Pepper
2 Tbsp Garlic Powder
4 Tbsp Dried Thyme
4 Tbsp Smoked Paprika
4 Tbsp Chili Powder

Haha. I can bacon, sausages of all kinds. Links, Italian, regular, spicy, I also water bath heavy cream. I make an amazing chicken tikka masala (Indian dish) there are so many more options than people realize. And it’s not rebel canning. It’s called preserving food! ❤🙌🏻🙏🏼

@@Sabbathissaturday Potpourri and I have a friendly running joke going where she's often chastising me for some of my (possibly "not by the book") canning practices. I was joking that she'd joined my "dark side" with her breaking away from recommended practices with the sausages.

I have a whole bunch of extra bell peppers and a whole bunch of tomatoes I was just contemplating what to do with. Looks like I’ll be trying Cajun soup tonight! Looks delicious!

That looks so good! You can buy uncured Andouille sausage (probably at a meat market), according to some chefs. And yes, you pronounced it correctly ... awn-Dewey 😊

I canned this yesterday and opened one tonight. I made a dark roux, poured in the soup and a 10 oz bag of shrimp and served over rice. It is amazing! I will try the next jar without the roux to see how we like it best.
