My meal at Sarposh was an eye opener into the traditions of true Kashmiri cuisine that restaurateur Azmat Ali Mir seeks to showcase. In ingredients that she procures from the valley, to the brigade of wazas (cooks) from Srinagar who have made Bengaluru their home! To enjoy a meal here, park aside all notions you may have of the cuisine based on the odd so-called Kashmiri dish you may have tasted on a menu here and there. For the fare here is anything but that.
I opted for the maaz traem, a traditional celebratory meal and what followed was a procession of 12 dishes. From the initial methi maaz, soft and velvety tripe, served on a bed of rice, to a ghee-fried tabak maaz (ribs), dani phol (stewed lamb shanks) and a finely minced seekh kebab, to the hearty mains, rogan josh, the subtly flavoured sort you have never eaten before, rista (juicy meatballs), a comforting palak and razmah dal, creamy nadur (lotus stem) yakhni, marchewangan korma, the only searingly spicy dish of the lot, and gushtaba (meatballs stewed in yoghurt and dried mint), each preparation I found exquisite and subtly distinct in its flavour and taste.
If you’re looking to try wazwan fare true to its roots, far removed from the ginger-garlic-chilli-cream infused heavy dishes that get passed off as Kashmiri elsewhere, definitely check out Sarposh restaurant and tea room in Bengaluru.

The festive wazwan (maaz traem set meal) that I tasted is priced at Rs. 2300 (excl. taxes), this platter can easily feed two including the main course dishes. Since this was a non vegetarian wazwan, we ordered the vegetarian dishes separately on a la carte basis, these are priced at Rs. 325. One can also order individually the non vegetarian dishes that we tasted, chicken dishes begin at Rs. 425, mutton at Rs. 600.

I hope Sarposh maintains the quality and doesn't compromise with the taste - kudos to them for not succumbing to 'local taste' needs, which is a downward spiral..I have seen this in Chennai where trying to cater to 'local taste' no other cuisine has survived.

Indeed Kripal Sir never watched any detailed episode on the Kashmiri cuisine. Sarposh is in Bengaluru. I m in Mumbai. Will try to visit Sarposh on my next visitto Bengaluru. As a kashmiri i can tell you that tabakmaaz and a chilled beer is a perfect combo 😊 And she is correct that Kashmiris like their meat too much to make it either too soft or cover the flavor with too much spice, onion or anything.

What a lovely couple, supportive of each other, and of course the cooks are very skilled. I am a vegetarian but I will visit this place for the j&k style rajma that I fell in love with during my visit to katra, simple with the smaller rajma beans, but with good quality ingredients.

She’s probably one of the finest and magnificent food enthusiast that has elevated Kashmiri wazwan to an eternal level in the southern part of India. Owner Azamat is smart , passionate and detailed oriented. Reason for her success as “Cultural Entrepreneur “ . She should open a branch in Hyderabad. Indian food is so diverse at the same time a lot similar too like our country itself as per geography and weather . Kashmiri Muslims use vanaspathi ghee and mustard oil for cooking while Kashmiri pandit use desi ghee and mustard oil. Kashmiri pandit cooking is better because they tend to cook meat to Weldon , meat must fall from the bone. Kashmiri pandit are also good at cooking fish, lotus stem and green vegetables because they use Asafoetida to enhance to flavour while Kashmiri Muslims don’t even touch it.

Azmat being around was quite helpful as she was able to brilliantly articulate the rationale behind each dish , be it the way her fellow Kashmiris dine or the preparation of the Wazan dishes or the combination and order in which one needs to enjoy the decadent yet delectable Mas-traem platter . The tripe dish was certainly your top favourite ( please correct me if I am wrong ) . All the others dishes including a few veggie dishes also looked impressive, however you were truly blown away by the tripe and the spicy meat dish . This is certainly a meal for 3 and I must say that the price is extremely reasonable for the quantum of food that they served . Need to visit this place with some of my friends ( hard core meat lovers ) just to enjoy and soak into the experience. This Vlog was so unique for me as it truly helped me understand a lot of Kashmiri ( authentic) food preparation, their hospitality and food culture. Kudos to Azmut , her hubby and the Waza MasterChefs 👏🏼👏🏼👏🏼👏🏼 Thanks to you and FL team for dishing out such an incredible Vlog . This will definitely leave long lasting impression on me . Just bcz of ur vedio I had visited this restaurant today What Dey are showing nothing is der like that highly prised no welcome drinks , no hand wash thing as shown in this vedio , But it has good things also very hygiene , ambians are good , staff are excellent , I forgotten the name of the supplier he served me at table no 9, really professional,

Curious to know, @ramegowdamg3935 did you order the maaz traem wazwan that I ordered. If so, the tash naer would have been presented prior to the start of the meal. There was no welcome drink but a kahwa to close the meal.
