I'd watched a show with a French taught chef & he pointed out that being a snob about frozen veg is unfounded. The frozen is picked fresh & processed & frozen within hours. Waaay fresher than the stuff that might have been sitting in a hot train car & tractor trailers for days.
I’ve unfortunately had the opportunity to work with her. She’s recently been hired as an executive chef position at a high end resort I’ve been cooking for for over 3 years now and she is the complete opposite of her tv self. Within a week of her changing the menu, half of our staff is gone because she would verbally abuse them and her menu was too stressful on our 8-10 person total kitchen staff. She’s nothing but a tv chef and it shows through when you work beside her.
@@colgurber Bro, I completely agree with you. I live in the city where her famous restaurant Chef and the Farmer is (literally less than a block) and I see her all the time. She doesn’t seem to be a very nice person. I’ve never been to her restaurant and based on how she carries herself, I definitely won’t be trying it now. I thought perhaps I was being to harsh - reading your sentiments now has confirmed what I perceived of her.
