Ingredients:
Mutton liver (kaleji): 500 grams, cleaned and cut into pieces
Onions: 2 medium, finely sliced
Tomatoes: 2 medium, finely chopped
Green chilies: 3-4, slit
Ginger-garlic paste: 2 tbsp
Yogurt: 1/2 cup, whisked choice
Turmeric powder: 1/2 tsp
Red chili powder: 1 tsp
Coriander powder: 1 tsp
Cumin powder: 1/2 tsp
Garam masala powder: 1/2 tsp
Lemon juice: 1 tbsp
Fresh coriander leaves: a handful, chopped
Fresh mint leaves: a handful, chopped
Salt: to taste
Oil or ghee: 4 tbsp
Instructions:
Preparing the Kaleji:
Clean the mutton liver thoroughly under running water.vinegar
Cut it into bite-sized pieces and set aside.
Cooking the Kaleji:
Heat oil or ghee on a tawa (griddle) or in a large pan over medium heat.
Add finely sliced onions and sauté until they turn golden brown.
Add ginger-garlic paste and sauté for another 1-2 minutes until the raw smell disappears.
Add the finely chopped tomatoes and
Cook until the tomatoes turn soft and oil starts to separate.
Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook for a minute.
Add the mutton liver pieces and cook on high heat for 3-4 minutes, stirring continuously.
Reduce the heat to medium, add whisked yogurt, and mix well. Cook for another 5-7 minutes until the liver is tender and fully cooked. Avoid overcooking as the liver can become tough.
Sprinkle garam masala powder and mix well.
Add lemon juice, chopped coriander, and mint leaves. Give it a final stir.
Serving:
Serve hot with naan, roti, or paratha.
Garnish with additional chopped coriander and mint leaves if desired.
