Many tea masters and producers strongly advocate 100ºC water to truly accentuate qualities of the tea, at the same time proof-testing the better ones apart from the others. By tuning temperature or repeated rinses in the beginning to remove foul smell; are we doing a disservice to ourselves or creating a conducive setup for a pleasant tea session? If tea sellers are doing the same setup to make an average tea appearing more yummy than it is, when do we draw a line between skill in brewing vs innate quality of the tea itself? Is buying high grade tea still sought after since outside parameters can affect the taste profile of any product on hand? Looking forward to your next livestream session!

Great video, love the focus on the basics. I am wondering what your thoughts are on flushing the tea leaves with ice cold water in between steeps. Would this then eliminate the need for resting the tea leaves in between brews?

Thanks for watching and great question. I personally would NOT wash with cold water in between steeping for several reasons; it may shock the tea, dilute the tea leaves for future steepings (as they are best brewed with hotter water) and would not allow the tea to rest (out of water) before being infused again. I am sure you could experiment cold steeping, however I do not do so.
