Rachel shares a quick and easy way to bake yams with no sugar, gluten or dairy & no sugar substitutes. Just using the natural sweetness of the yam, cinnamon and salt, along with a bit of olive oil, this recipe is friendly to AIP diets, anti-inflammatory or autoimmune protocols, and Hashimoto’s Autoimmune Disease. Also great for people eating clean and/or counting macros. Macro info listed at the end of the video.

Looks absolutely delicious. Its high fibre content contributes to a glycemic index of 54, significantly lower than that of potatoes having a glycemic index of 80. This makes yam better suited for weight watchers, diabetics and those with heart disease as it does not create sharp increase in insulin response.

I'm making 'em again tonight!! Insanely delicious with the skins rubbed with butter, salt, cinnamon. The skins get all caramelized and yummy!!!

p.s I do what you said - an hour at 350 & then turn off oven & leave 'em in while oven cools! Only difference: I bake 'em in a little brownie pan on parchment paper & cover pan with foil.

I just popped 'em in the oven! 2 of them. I rubbed on vegan butter, salt, cinnamon. Put them whole in a tiny pan & covered pan with foil. Hopefully that will be okay. I was afraid to wrap each one in foil because I worry about aluminum leaching into food - maybe that's not even a thing - I truly don't know - used to be a concern but maybe has been debunked by now. I'll let you know how they turn out!!!

I just like the foil when I’m in a hurry because I can pop them in the oven & back out and not have any dishes to clean. I haven’t ever heard of aluminum foil damaging food.

Except for tomatoes or acidic foods… they will eat into the foil a bit, so I wouldn’t recommend having tomato based stuff on foil.
