What is the difference between Chow Mein and Lo Mein? Both of these dishes are cooked with noodles (plus a combination of vegetables and protein), but their similarities stop there. Chow Mein, translates to stir-fried noodles. Lo Mein, means stirred or tossed noodles. Chow mein is more of a dry noodle dish with a light and delicate sauce - if any sauce at all. Lo mein is a noodle dish that depends on a rich sauce for much of its flavour. Which one do you prefer? Chow Mein or Lo Mein?
@annepahler8726 Thank you so much for appreciating that! The sauce plays a big part in this recipe. Dividing it to toss and cook all three components separately allowed each to absorb the sauce fully yet still looked fresh and vibrant 🧡🤩

Thank you for the recipes. I would like to see written recipes of the duck made with soya skin and the other recipes as well. I know that there are written instructions as you are cooking but they are so small and the font is in white, very difficult to read. I love your dishes and would like to be able to read the instructions

Thank you for your question. Kao Fu is a blank canvas, it'll taste like however you want it to taste - depends on the seasoning you cook it with. The texture is soft and spongy, that's why we pan-sear it first to create a golden and crispy exterior before adding sauce in to cook down and let it absorb during reduction; resulting in a juicy, chewy yet tender mouth feel and is "extremely delicious" ☺😋
