Sorry dude, but when you make soul food style mac n cheese, you need to make sure the pasta is still hot so that the cheese melts and mixes together. That is why the first one wasnt gooey, and why you still saw cottage cheese curds in the second one. Soul Food is like baking. Dont mess with the technique. LOL
I actually made the five cheese Mac and cheese tonight, and even when the pasta was hot when I put my cheeses in, the Mac and cheese still came out dry... but it still tastes hella good!
It also looked like his macaroni was under cooked to me. You want to boil it until its cooked to the point where the noodles expand a bit. I know it'll cook more in the oven but we don't do al dente. AND don't strain it until completely dried out like that.
You have to be a fan of cottage cheese to like the Terry Crews one. It's my go to recipe. Easy to make and cheap too. And you can change flavors by changing the solid cheeses. I used up leftover Jarlsberg last time with cheddar and it was great. Tomorrow making it again with Colby and Edam cheese.

I’ve tried both recipes and you can’t go wrong with either recipe. If you’re a beginner type of cook then maybe you can. Lol BUT what I do with Terry Crews recipe is blend the cottage cheese, sour cream, egg and milk in my nutri-bullet first then mix it with the pasta, cheese, etc. Trust me it’s way better that way.
For the Mac and jeezy, my grandma makes something similar and maybe it would taste better for those of you who don't like cottage cheese if you heated the sour cream, cheese, and cottage cheese together until smooth. Then cool, mix in the egg and pasta and bake. That will help with the texture :) excited for the Sunday video!

Same. I made this once for myself and then a second time for either thanksgiving or Christmas. My nieces loved it, even the one who I was told would likely not eat it cause she doesn’t like cottage cheese.

I think the best substitute for cottage cheese is just sour cream with a lot of salt or cream cheese. I used just sour cream and cheese and it worked out perfectly.
