Boxed cake mix definitely reminds me of my childhood as well. When I was about 10 years old, my mom decided to put me in a cake decorating class. Every Friday for about 6 mos we would bring our own cakes to the class, decorate them, then take them home to eat. To be honest, I still use boxed cake mix when I make birthday cakes for my kids. They love pouring the mix into the bowl and helping me mix.

I'm constantly picking up bowls and spoons and spatulas etc. I buy from TKmaxx, Sainsbury's, Homesense, Chickadee, H&M home and sometimes when I'm on holiday or travelling I pick up some bits there. A lot of my things are actually from Sur La Table and Michaels! I love having mix mach bowls so i love to pick up individual bowls etc here and there when i see them to add to my collection.
This recipe looks amazing! I love baked oats type recipes, and the texture of this one is ideal - I don't like the ones where they become too flapjacky.

When we were little my mom used to bake Birthday cakes or cupcakes for each of our birthdays. We would always help bake! 🤗 and my favorite thing to bake with mom was brownies! Yum!
kate this looks almost like bread pudding but I'm wondering does it taste like oatmeal I mean I know they have oats in it but I mean is it the consistency of oatmeal but it looks amazing and I can't wait to try it thank you kate for making it and giving us the recipe
Mmm sounds delicious with Apple and Blackcurrant. I haven't done it in a sauce pan so not sure on specific timings but i'm pretty sure it will work just the same! xx

I don't normally like 'mushy' things so not sure but then the thought of the fruit and the sweetness of the cake....sounds delightful and really sounds delicious to serve warm with vanilla ice cream. PS.....Love your fingernail polish and like I always tell you....love you guys ;o)
in Texas we could call that a cobbler. looks amazing. an easy cake mix cobbler that is our go to dessert..... 1 box yellow cake mix, 2 15 oz cans of peaches (or your favorite fruit in light or heavy syrup), 1 1/4 stick of butter, 1 TSP cinnamon plus just a sprinkle more. in a 9x13 Casserole pan pour your fruit in and mix in the tsp of cinnamon. I normally mash the fruit up into more of bite size pieces. Pour the entire dry cake mix evenly over the whole Casserole of fruit. Slice the butter into 24 equal sliced pats and distribute evenly on top of the cake mix (I usually do 6 rows of 4).
bake in a preheated oven of 350-375'F or 176-190'C (I hope I did the conversion right) for 45 minutes or until there is a browned crispy top. Do not worry if it gets really crispy. It will soften up over the course of 24 hours (if it lasts that long in our house it is AMAZING). Let set for 30 minutes and serve warm with some vanilla ice cream or regular cream on top, or it is wonderful colder also.

Sounds like what we call a “dump cake.” You can use pretty much any fruit or pie filling. We also sprinkle chopped pecans over the top right before baking. So yummy.
Jana C it may be a dump cake officially. My family just calls it a cobbler. A traditional cobbler is 1 cup of each milk, flour, sugar and 1 tbsp baking powder, mix well. Melt a stick (1/2 c butter) in a 9x13 pan on 350'F until hot and bubbly. Pour batter in and distribute fruit over the top. And sprinkle with granulated sugar and a touch of cinnamon. Bake on 350'F for 45-60 minutes. My family just prefers the gooey of the juices from the peaches. My grandmother always made cobblers with a pie crust type top and bottom. I never really have liked pies of any kind.
Cleo, I love that. The way I look at it, part of the fun of cooking/baking is making recipes your own or whatever makes things that your family will enjoy. When it comes to cobblers, for us it’s made with the pie crusts on top & bottom. My husband makes an Iron Skillet Blackberry Cobbler that is so amazing it makes me go to my happy place every time. I can’t relate to not liking pie. I’m like my late grandfather. I only like 2 kinds of pie…hot or cold. 😉
