I have been popping now for about a year. the more i pop the better results i get. I still get many unpoped corn. it is lots of fun. I watched Greg Sweet's videos on kettle corn and have learned a lot.

We did kettle corn a few years ago at a county fair. We had about about every color and flavor on our kettle corn. We had the bags you make yourself with a heat sealer. Not only could we not sell it, we couldn't hardly give it away! Instead of having the bags like you use for cotton candy, our bags looked too professional. People told me that it looked like we bought it from a company, and we we were reselling old kettle corn. They didn't know it had just been made that morning before the fair grounds had opened, that day. Because we specialize in candy apples and cotton candy, we didn't have the space to make the kettle corn while the customers were there, it took up too much room in the trailer.

Great point Ricky. I've noticed already, I do much better if I have the popper on site and am actively cooking. Even if I brought some, it does far better if I am operating live.

The best popcorn available is the Kornagra brand. They were way better than Gold Medal. Gold Medal is still better than Pop Weaver.

Not sure if you're still trying to do Kettle Corn (have just come across your website & RU-vid vids) but I got into this via Greg Sweet too. I have his Kettle Corn Kitchen with a Mad Max kettle and Gorilla (Ape?) paddle stirrer. It's the big kettle with the 3 burners for small all the way up to ginormous batches. Nice equipment. It's all top-notch. His canopies are from Caravan which is very nice because they're fire-rated. Up here in CT/MA that's important due to laws passed after the Hartford Circus Fire back in the 1940s. BTW, I expect you've solved the problem by now but I think you might want to bump the pressure up to 12-15psi so it burns a bit hotter. That way your kernels will explode vs cooking until they pop. You should get fewer butterflies that way (too low a temp causes mushroom popcorn to expand vs explode and it looks like butterfly popcorn) and you'll get your cook time to about 2 minutes or so. Oh, the unpopped kernels are the Old Maids (they don't get to go home with anyone) & they're not entirely waste. If you have a chicken or pig farmer neighbor, they can mix all of the stuff you end up with in the sifting bins into their feed.

@@BensCarts Great. Are you still doing kettle corn? I bought your book and one of the things I've been taking for granted is how there's no real risk (except not making money) if a venue turns out to be smaller than anticipated. With hot dogs & other foods there's the loss from buying & maybe cooking perishable foods. Kettle corn is nice because I cook based on the crowd & as long as I use the popcorn, seasonings, etc within 6 months I'm not throwing out anything perishable.

I recently bought the exact setup you have. I set the PSI at 10 and put a few kernels in to let me know when 2 cups of corn oil is up to temp. When those few pop I add 3 cups of Magic Mushroom kernels and SLOWLY add about 2 1/2 to 2 3/4 cups of sugar. I pop three batches then I'm able to bag 9 to 10 medium sized bags. I also end up with clumps of sugar that I have to pick out when the batch cools off. I've tried so many combinations but this ratio seems to work the best for me. I'm not sure how Greg Sweet was able to pop 8 to 10 cups at a time because I've tried his recipes and it did not work out for me with the same machine, I ended up with so much unpopped waste :-(

Thank you Anthony! I've eliminated the issue with clumping by adding my sugar all in the beginning and using the auto stirrer or adding sugar slowly while it stirs. Of course I'm only about 22 batches into this thing so it may be dumb luck. Love to interview you on what you've learned so far though. You game? ben@vendorsunited.com

You might want to try less sugar. The recipe I use is 6 cups of uncooked corn with 1.75-2 c. sugar. Also I cook at 15psi. I have found cooking at 17 psi to be too hot.

It's brown sugar from the Great Western brand caramel mix. It lumps up then it dissolves. :) . Great eye.

Are you using the 50 lb box of Gold Medal or the little containers? We have had really good luck with the bulk boxes, it sells as well as the regular kettle corn & costs 25% more.
