I show you very basic knife sharpening technique/skill. Good for beginners as step 1 to learn how to sharpen knives. SUEHIRO Debado MD Series has #200, #1000, #4000 three different grids as a set.
MD #200 Grid cuts very fast, but also fairly soft. If you sharpen secondary edge only, it is ok. But if you sharpen primary edge, you have to flatten it during sharpening.
MD #1000 Grid cuts fine. And it's also soft. The softness is very similar to Cerax 1010 / 2020 / 3030. Same as MD #200, if you sharpen secondary edge only, it is ok. But if you sharpen primary edge, you have to flatten it during sharpening.
MD #4000 Grid cuts ok. It's fairly hard. But it is just too expensive.

I got 10k and even 15-30k Japanese natural stones. You work that 3k like result of 15k. To touch cut. Very impressed. Patience and steady hand like a surgeon. I’ve so more to learn. This is said after at least 3 very unique techniques from others I learned from. Yours tops that more. Thank you for sharing that to us.

Thanks for the great video, enjoyed from start to end, subscribed already. Your sharpening method is very interesting, only using strop motion, I will try next time. I agree a good technique should wear the least amount of stone and the blade as you did very well. This technique looks very precise and consistent, compared to a push pull method. I have shapton glass 320, naniwa chosera 1k, 3k and kitayama 8k. I guess they are similar to those you used, except they are narrower of course. Going through your videos, they are great, thanks.

And I'm sorry that I haven't updated on youtube for a long time since I'm pretty busy with my own Chinese channel. But in 2020, I do will upload more. I also do push and pull, but very light pressure as well. Nearly no pressure. But must start on coarse stone even the edge is not that bad. Thank you!

What's the model/manufacturer of that 10,000 grit stone?

Besides size and stand is there any difference between the Debado stones MD, S and LD. Are they all the same stone formula. They fired process. I am after replace cracked chosera stones.

Hi Francis! Thank you for writting me! I have just compared DEBADO MD and LD last week. MD is like Cerax but splash and goes. #200 grid has good cutting power but soft. #1000 grid cutting power is just medium and soft. #4000 grid is hard and good cutting power but extremely expensive. LD is different. #180 great cutting power and harder than MD #200. LD #1000 great cutting power and much harder than MD #1000. LD #4000 is almost the same as MD #4000 but the surface is finer and not that expensive. Now Suehiro has no base version of LD even cheaper. LD #180 and LD #1000 thickness is 29mm. #4000 is 23mm. They might last your life time due to hardness. My experience: get an Atoma #400 diamond plate, to create some slurry on LD #1000 and #4000 before sharpening. Cutting power is much better, tactile feedback is much more comfortable and much easier to clean. The problem for Naniwa Chosera is you can't soak it. Otherwise it cracks. And better to make it stand by a wall after use.

Hey there! Thanks for your message. I suggest round about 22.5 degree each side. Both together 45 degree. Very natural. Thing about dropping sands. The hill is actually 45 degree. Natural made.

I've been researching a lot and have decided to get the Suehiro Debado MD #1000 as my first stone, is the #200 and #4000 a necessity in the MD series? Thanks and great videos BTW!

Get Suehiro SNE #1000 instead of MD #1000. It's harder. And it has much better cutting power. I suggest you take DEBADO LD #180 instead of MD #200 with the same reason. If you can wait I will receive DEBADO LD #1000 and #6000 very soon. I will try it and feedback. DEBADO MD #4000 is good but just very expensive.

I'm leading towards the splash and go stones but I'm not sure if traditional wetstones are better as I'm new to sharpening. Do you recommend having 3 different stones? What bridge would you recommend? I was looking at the mtckitchen.com/sink-bridge-for-sharpening-stones-toishidai/ or www.chefknivestogo.com/nasibr.html.

I use Suehiro TDG-44 on a box. It works perfectly. SNE 1000 is fine. Naniwa Pro 1K also great.

Naniwas have cracking and crazing risk. Chosera 800 and 3000 for speed. Debado MD for size and feel. Cerax, same performance, lower price.

@@tailibaba I havent tried the 1k or 4k debado MD yet, but do have the 600, 1k, 3k and 6k SNE debados as well as the 320, 700, 1k, 3k, 6k Cerax. The 600 is a bit muddy and wears a little slower than a cerax 320 cerax but the 1k, 3k and 6k don't wear too fast, are harder and aren't as muddy as the same grit cerax. The 700 Cerax is not a fast wearing stone and not muddy and I would choose that over the sne 600 grit unless you really need a splash and go. I was told by my Suehiro importer who had tested both series was the MD 1k and 4k was closer in feel to the cerax and the SNE were much harder and slow wearing.

Naniwa Pro and SS are good. Don't worry about crack too much. Due to material, it's natural. Debado LD is better than MD after comparing lately.

Hi Chad, if you treat it well, Naniwa is no problem. Always lift it up by the wall. Next day you will see wet area dropped at bottom.

Talking about #1000 grit. old CERAX: I love it, for me the best feeling stone in terms of feedback. Yeah because it is soft, I can feel I need to flatten often New CERAX: my neighbour wanted to start learning sharpening, so I put together a starter pack for her. When I tried it out I remembered just then that it is actually a new formula now. Got harder, but lost a bit of the feedback. Slurry production remained similar, which I like Debado LD: just got it, done 3 sharpenings on it. Actually I’m blown away. I feel it very close to the new CERAX, for some reason on the feedback a feel a bit more similarity to the old CERAX than the new CERAX has to the old one. But need to do some more side by side test, so need to do another lesson to my neighbour to have that also :) But all in all a really love the LD, as it is very close to the tactile feel of the old CERAX, while gotten harder, so less flattening. To be honest, I like it better than my chosera 800. I don’t like that the chosera is too hard, doesn’t produce as much slurry, so I have a better feeling what happening with the blade on the LD. It is a bit slower, but we are taking about 2 passes instead of one. On my very hard knives it is 3 vs 2 at worst case, so adds let’s say 1 more minute. I don’t really care about that, actually I like it that it’s less aggressive, as it mean it is more forgiving for little mistakes. I must say chosera 800 is a bit overhyped in my opinion. I always felt that it is good, but hand feel could be better, and the cracking thing is annoying (now that I dry it with a towel on it, the cracks aren’t getting worse) Would you recommend me to try the MD based on these? By the way, I always start my stones with a nagura, before sharpening to have a slurr already.
