About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. The real, traditional Thai tea is actually Ceylon tea, which can give a reddish-brown color when brewed properly. Since Ceylon tea are quite expensive, people started substituting it with cheaper black tea and added red food coloring. I'd recommend brewing Thai tea with good quality Ceylon, it makes a huge difference.

Agreed. And there is such a good thing as good orange pekoe too (not the supermarket - the flowery one is actually very good. Good actual black teas are best bought orthodox grade loose leaf ones

Honestly I have tried so many of these Thai leave brands and none of them taste as good as the restaurants at all, including the brand featured in this video. No matter what the concentration is. Not sure what the Vietnamese restaurants use.

@@mistyles6270 I also tried the Thai Tea brand in this video and was disappointed because it was a little different than the tea I get in my local restaurants. Then I ordered "Pantai" brand from Amazon, it's exactly what I was looking for. Good luck =)

I don't usually have sweetened condensed milk or evaporated milk on hand but I make this all the time using just tea leaves, water, sugar and whole milk. Only equipment you need is cheesecloth because like Pai said there's a lot of small grounds that could get into the final product. I boil the tea on the stove with as little water as possible to extract concentrated tea flavor, strain it through twice-folded cheesecloth directly into the serving glass. While the tea's still hot, add sugar or sugar substitute, pour cold whole milk in, stir and add ice. I swear it tastes just like the real thing.

I love Thai Iced tea, everytime we go to thai restaurants that's the first thing I always get. Now I know how to do it thanks for that. Then i didn't realize that we have a Thai tea that we bought when me and my husband went to Thailand few years ago...I'm just so happy right now. More power! And looking forward for more recipes.

Always love myself some Thai Iced Tea. Usually every week I'll fill a pitcher of warm water, and tea in a strainer, then when it's done I'll leave it in the fridge, where I also keep a can of condensed milk with saran wrap and an elastic on top to cover it after opening. All that's left is to add salt and sugar. Makes me happy every morning!

Hello, Pailin. I'm not sure whether I mentioned that my wife ancestors are from Korat province, but one of her paternal grandfather came from the north. The Northern Thailand is where majority of Cha/Tea Thai plants are grown. The story was told that the Chinese merchants in Bangkok wanted to find a cheap way of increasing the hue of the tea without using the natural ingredients, so they added the food colors to the low grade tea bulks for the vendors. One of the original favoring and coloring ingredient, that gave the orange to red hue, came from safflower (dok kam-phoy) or saffron. Saffron is imported at the time and mainly for the royal court. The hue intensity from the safflower is difficult to achieve and is the last ingredient to be added to the final drink beside the cost of additional ingredient. We do homemade Thai Tea/Cha Thai at home by a gallon each time. We find it to be refreshing and healthier than mass produced Thai Tea with added for colors. We add the dried safflower either from Thailand or California, whichever we can acquire in bulk. But mostly we purchasing the dried safflowers from Thailand. This is our natural Thai Tea ingredients:1. Black Thai TeaThese following ingredients are to be added depending on personal preferences to the bulk tea,2. Grounded Cardamom3. Grounded Tamarind (your choice)4. Grounded Anise 5. Vanilla Bean Powder (or Vanilla Extract to be added after boiling/soaking)6. Dried Safflower or grounded (to be added after final solution is cooled down at the desired coloring hue)I preferred my Thai Tea without milk or black with cane sugar (Cha Daam Yen). We would add the cardamom, anise, tamarind, and vanilla during the boiling depending on the aroma and taste, then we would allow the hot solution to soak and to cool down before pouring into the glass jug container. Each person would adding into their tall glass cane sugar, dairy milk(S), and or coconut milk depending on their preferences.

BTW, if you use a paper filter, thoroughly rinse it with boiling water beforehand. Almost every paper filter brand has lots of crappy tasting residue.

A friend turned me on to Thai iced tea and it's so good and refreshing. I'm lucky enough to have a friend that grew up on a farm in Thailand. She makes the most amazing fried rice.

I have yerba mate chai, and what I did was the same steps just replaced the condensed/evaporated milk with almond milk and with from my estimation about a tea spoon or so of sugar and I found it to be pretty good.

Love your thai tea recipe. Where can I find your cloth coffee filter bag? I’ve been trying to find it online but I don’t seem to be having any luck. Your link to your kitchen equipment only has the cloth coffee filter that is attached to a metal holder which I’m not interested in. Any help would be appreciated thank you

The "pink" comes from adding the "Hale's blue boy" red "salacca" syrup to the milk (plus sweetened condensed milk). No idea how easy it is to get salacca syrup if you're outside of SE Asia though.

OMG yaaaaasss. I was scouring the net for a Thai tea recipe to replicate the complex flavour profile I get at good Thai tea vendors in Thailand... tried extra vanilla extract, even a toasted cardamom pod, different types of sugars.... but apparently it's the PINCH OF SALT that I was missing!!!!!!!!!! I loveeeee Thai Iced Tea but unfortunately Thai Tea Leaves are not common in the Philippines so what I did was to use the only tea available at hand which is Earl Grey Tea and added the left over sauce of my fruit salad from New Year's Eve. (it has the same ingredient as showed here) and it tasted real good! Now heating up another batch for diner tonight with your Green Curry and Pad Thai recipe!!!! Thank u!!!

Go with Wang Derm. A bit pricey but it's good quality. They have both loose leaf as well as the easy tea bags. Both are great. You can use the sock for loose leaf. But a French press or Japanese teapot works too. Also I suggest you to chill the tea first in the fridge. I don't like Thai iced tea all diluted. I also use Equal instead of sugar. And I personally use half and half most of the time. Comes out great.

The point is to have a strong tea and that's why it's also very sweet. To have a strong tea, cheap tea is needed (broken leaves).
