Thai Tea Crème Brûlée Recipe - Hot Thai Kitchen!

Crème brûlée is an easy-but-elegant dessert to make at home, and it's a great one to make in advance! It's also a perfect candidate for being "Thai-ified". The flavour of Thai tea works wonders with the creaminess of the custard, and the slight bitterness of the tea actually balances the richness and sweetness, making it very hard to stop eating! You can make the custard in advance, keep it wrapped in the fridge, and brulee the sugar whenever you're ready to serve. If you don't have a blowtorch, you can also melt the sugar under the broiler, preheat it VERY hot and put the COLD custard on the highest rack. Disclaimer: I've never done the broiler method personally, but I know it can be done. Let me know how it goes!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. If you put some emptied vanilla pods in a container of sugar and leave it for a week till the pods dry you can blend it up then sieve it and use it for the creme brulee. Takes it to a whole new level

I might make this for my mom who is currently suffering from situational depression. She loves tea and loves this one restaurant that has her favorite Thai tea Creme Brulee but it is far away, so I wanted to give her something that will hopefully make her feel somewhat better

u can go to home improvement store and get good torch. go into plumbing isle and get MAPP gas instead of propane/butane. u can get torch with adjustable flame and click on/off starter. that will brulee in seconds. :P

I made this Creme Brûlée’ and it’s delicious. Not too sweet just perfect. The best part is the burnt sugar. Thanks for the recipe.

With all the creme brulee videos I've seen, I don't recall anyone mentioning a large shallow ramekin! It makes perfect sense, since the crunchy topping is the star of this dish...but that Thai tea custard looks great!

Honestly you can tell Pai is not a native English speaker in the way she speaks it so perfectly, like zero mistakes. Native speakers make grammatical errors all the time and most of the time they don't care but I've rarely heard Pai make one and if she did she always corrects herself. In summary, her English is too good.

I made "Chai-scream" (Chai Ice Cream) a while ago, but I based on a more trad "Creme Anglais" method. (I steeped the tea in the warm milk and strained before adding to the egg and sugar, and then mixed in ribbons of syrup made from Thai-tea reduction and sweetened condensed milk after it was frozen/set) It was very successful and my customers were very impressed, but I had to use A LOT of tea to make it work (good quality Thai tea is expensive), so i haven't made it since. ☹️💵

What make Thai tea leaves do you use? These are just the flavored leaves, right, and not the mix with other ingredients?

Hi Pai! Wondering if you've heard anything about this either in cooking school or your experience - Apparently sugar from sugarbeets and sugar from sugarcane taste identical but sugar from beets will not caramelize and will just burn. Any idea if this holds any water? Was wondering which brand of sugar it is, and whether or not it specifies beet or cane. Thanks in advance!

+DependantRope As far as I know, most sugar in N. America are beet sugar unless it's specified on the bag as "cane sugar". I'm pretty sure one I used is beet sugar and seemed to work just fine!

Hi Pai, would you recommend any brand of Thai tea over another? I'm confused about which brand is really good, though not very many brands to buy here in Seattle. Yeah, we're neighbors! Hoping to buy your book soon - maybe Costco US will carry it too!

+Sara Chen It's milk that has been boiled to remove 2/3 of its water content and is most often significantly sweetened. You buy it in cans or squeeze tubes.
