Thai Red Curry
Hey foodies! 🌶️ Have you ever tried Thai Red Curry? It's one of my absolute favorite dishes because of its rich, fragrant flavor and creamy texture. Made with a blend of red chili peppers, garlic, lemongrass, and other aromatic spices, this dish is a true explosion of flavors in every bite. The addition of coconut milk adds a hint of sweetness and balances out the spiciness perfectly.
The best part about Thai Red Curry is that you can customize it to your liking by adding your chhouce of vegetables (bell peppers, bamboo shoots, or eggplant). Pair it with a steaming bowl of jasmine rice, and you've got yourself a satisfying and comforting meal that never disappoints.

Ingredients :
3-4 Sambar Onion
2-3 Garlic
Coriander Stems
2 Lemongrass Stems
1 Galangal Knob (Kulanjan / alternatively half Ginger knob can be used)
2 Kaffir Lime Leaves (alternatively Green Lime zest can be used)
5-6 Kasmiri Red Chilli (soaked in water)
1 tsp Coriander Seeds (Sabut Dhaniya)
1 tsp Cumin Seeds (Jeera)
2 tsp + 2 tsp Oil
Salt as per taste
Tofu cut into small cubes (alternatively Paneer can be used)
Chopped veggies (Mushroom, Baby Corn, Broccoli & Capsicum)
1.5 cup Coconut Milk
Basil Leaves (optional)
1 tsp Jaggery
Method :
Cut Lemongrass Stems it into small pieces (remove the outer layer)
Take it into mixie
Add 1 Galangal, cut into small pieces
Add cut 2 Coriander Stems
Add 3-4 Sambar Onion, cut into pieces
Add 2-3 chopped Garlic
Add 2 Kaffir Lime Leaves (remove midrib and use)
Add 1 tsp Coriander Seeds (Sabut Dhaniya)
Add 1 tsp Cumin Seeds (Jeera)
Add 5-6 soaked Kasmiri Red Chilli (along with little water)
Add 2 tsp Oil
Add Salt as per taste
Churn to make thick paste and keep aside
Further Heat 1 tsp Oil in a pan
Fry Tofu cut into small cubes
Take out in a bowl when it turns golden-brown
Add 1 tsp Oil in the same pan
Add 1/4 curry paste prepared
Saute and add chopped veggies (Mushroom, Baby Corn, Broccoli )
Add Salt as per taste
Add fried Tofu and a little Water
Cover the lid and let the veggies partially cook
Further add chopped Capsicum
Add 1.5 cup Coconut Milk and cook until a boil
Add few Basil Leaves and remaining Kaffir Lime Leaves (optional)
Add 1 tsp Jaggery, mix it and turn off the heat
