This noodle dish is simplicity in its most beautiful state. It’s a prime example of where you take very humble ingredients, but treat and cook them in a way that heroes each element, making the finished result something truly special. Historically, jub kang (which, translated from the Thai, means ‘workers’) was a dish that grew extremely popular with Chinese labourers as it was cheap and filling.

I love white pepper/corns - it’s so aromatic, without the harshness of black 😻

Besides pork lard, I recommend fried garlic and fried garlic oil. The aroma from the garlic is everything to me.

I thought it would be dry and relatively plain tasting noodle dish when I saw it in the beginning but after you brought out the pork lard I know just by seeing it that it would be really good.

"......black peppercorns typically are hotter than white peppercorns, while white peppercorns have earthier flavours. That's because white peppercorns are soaked in water to remove the skins; the duration of soaking time impacts depth of fermented flavour, ranging from mild to funky."

In my personal opinion, black pepper is spicer but white pepper is more potent.

White pepper almost seems floral to me and so I tend to use it more than black pepper.

I would absolutely love to try this dish however the nearest Asian supermarket is a 9 hour drive either south or east from where I live. There is no such thing as pork lard nor the vegetable in the recipe where I live. I do have access to fresh noodles so I guess that’s something… 😂

May I please know where you got your condiment set? My grandmother, my grandfathers wife had two of these… i broke them by putting them in the sink and not washing immediately it broke my grandpas heart I’m sure he got over it but seeing I need to right my wrong before he’s gone too

Amazon have them . Look for 'Thai Kitchen Seasoning Storage Set Stainless Steel'. In Thai they're known as a "Puang Prik"
