What I used | Serves 4
Hello Folks!
I hope I find you all well. So for tea tonight we had this delicious carrot and coriander (cilantro) soup…beautiful flavour and lovely and smooth…and quite thick! If you prefer a not so thick soup, you could add more water or milk. I served this with a few croutons on the top and a splash of cream…but that’s completely optional :)
Everything I used will be below.
- 3 Tablespoons butter
- 1 Tablespoon olive oil
- 1 Onion - peeled & diced
- 1 Medium potato - peeled & diced
- 1 Stalk of celery - washed & diced
- 500g (1lb) Carrots - peeled & diced
- Salt & pepper to taste
- 1 Litre vegetable stock
- 2 Tablespoons ground coriander (cilantro)
- 200m (7oz) Milk
- 2 Tablespoons fresh coriander (cilantro) - chopped
Optional - croutons & cream for serving
