Your recipes look amazing. I'm gonna be trying this Karahi Chicken today. I would request you to give some measurements so that we can proportionately adjust with smaller/larger quantities.
By keeping the heat high and not adding too much meat. If the pan is small, add small amount of meat or cook in batches while keeping the heat high so the water quickly evaporates. Similarly with a large pan, you can add a lot more meat and cook on high heat.
