My ex was Italian and got me hooked on risotto, it is literally my favorite thing to eat but as many times as he cooked it for me I never paid attention. I've tried box risotto during desperate times but realized I needed to learn how to cook this myself. You really came through for me with this recipe. for a healthier, vegan option I soak 1 cup raw cashews in water, strain then blend with your risotto stock, add nutritional yeast and salt/pepper. Super creamy. That's my "heavy cream"
@@250Pants it’s good with a “cauliflower cream” too! I like to cook down some riced cauliflower until it’s tender, and then blend with a little unsweetened almond milk. Sooo good! I use this thick cream base for Alfredo, and cheese sauce bases all the time. It’s delicious without any added dairy.

if you use orzo you're not making a risotto, because orzo has not enough starch to get it creamy. Italians cook orzo the same way as risotto but the result is different. They call it "orzotto"
looks delicious! i've always been too intimidated to make risoto, but you're making it look easy! I will definitely need to give this a try now. at what point would you add vegetables to this? i'm thinking asparagus or mushrooms... yum.
I would caramelize the mushrooms with the onions and get a really nice brown on them and then add asparagus in with the last ladle of chicken stock so that it stays firm. You got this!!
Obviously one may add just about anything to risotto as their personal preference but my go-to is: onions, peas and pancetta, or I'll substitute toasted pine nuts occasionally, over pancetta, depending what I have in the house.

One of my favorite things to cook & so many different variations & options . The first few times i made it wasn’t exactly wonderful but practice makes perfect with risotto. Is it traditional to add butter at the end or is that an American addition?
all good until you added whipping cream. no need for it. just use cold butter and parmigiano off the heat and it will become creamy and tasty. also arborio rice is like the "weakest" for risotto. try carnaroli or vialone nano, they have more starch and firmer texture.
I’m not a nouveau cook, but I’m still haunted by making risotto LoL. I have the Arborio rice and the chicken stock, all the ingredients, but, I am still hesitant. I ALWAYS love trying to cook new things, but this is one I can’t mess up. On a personal note, I cook for my mother who has stage IV cancer so if it doesn’t come out right, I need to scrap it all and make something completely new and different and by then, she’s lost her appetite. Ohh I love risotto but it’s daunting as hell!!!
Arborio rice to make Risotto. This guy gives some good hints but just makes the basic rice without mushrooms, chicken, or other things you can put in it. Andrew really likes it but like I said, I’ve never made it. Sounds good. There is a recipe on the rice container.

So after adding the wine u said continue stirring with a wooden spoon...any particular reason for that? Also does it matter what kind of wood?i use a beechwood spatula

I know you commented a while ago but just in case anyone else was actually looking for an answer... all of the alcohol in the wine will cook out during this low and slow cooking process. The wine is added for flavor. Totally safe for kids too!

What's up my friend, thanks for the sub. Yes, essentially butter is whipped cream so I wanted to try and make it super white with the cream! You can absolutely sub out the cream for butter.

Me neither. When it’s al dante, turn off stove. Add butter and parmesan. Close the lid without stirring. Wait about 2-3 min. Then open the lid and stir it. Done
Okay I have questions regarding the Risotto I see that you used a wine bottle I forgot what it’s called anyways is there any other way I can use without wine because I’m not allowed to use wine of any kind
Been stirring my onions in oil for the about 30 mins now and i still couldnt seem to find any signs of chris brown as mentioned in 1:51 here…. Wonder where i went wrong..
@@s1lv3rr : Peanut butter is good. I put fig jam on a piece of toast. Curry, raisins, with mint leaf garnish is also excellent. But use less cheese. It's all a matter of personal taste.
