I found this recipe last year that my husband and I love. We halve this recipe for just the two of us and use a 8x8 pan. The recipe is called "LAZY ENCHILADAS". 1 box of Taquitos (chicken or beef) (we prefer the chicken ones.) 1 can/jar of green enchilada sauce (2 cups) 1 large bag of mexican blend cheese. Heat oven to 400°. Spray a 10x13 pan with cooking spray, line up the pan with your Taquitos then spray them with oil too. Cook them for 10 to 12 minutes. Remove from oven. Pour enchilada sauce over Taquitos then cover with cheese. Put back in oven and cook 10 minutes till cheese is melted. We serve lettuce, tomatoes, salsa and sour cream on top of our servings. Hope this is one for y'all.
I have hated eggplant for 75 years UNTIL I finally got a recipe that prepared the eggplant so the bitterness was removed. Yes, I know---why didn't I look for a recipe sooner? Well, I remember how much I did not like it as a child so I had a great prejudges against the beautiful looking vegetable and could not get over it until I finally found that it was the bitterness that I did not like. Thanks for sharing your recipes that I have tried many times over.
This is the 2nd of your videos that I've watched. I must say you do an excellent job. I watch about 14 cooking channels currently, and I find that yours are calming; of which I'm grateful. Your videos are just informative enough, and they are simple to follow. I look forward to watching more and I hope you'll continue. These smothered burritos are right up my alley. One of my favorite things to eat at Buffalo Wild Wings is the buffalo chicken tater tots, and I recently made a copycat recipe at home that was fantastic. I also had some loaded birria fries in Chattanooga awhile back that I want to recreate here at home.
Costco has the BEST pesto that exactly matches the one I laboriously made for years from scratch! It is bright green , not bitter. I never found a jarred pesto that wasn’t bitter. It made us switch from Sam’s Club to Costco just for that believe it or not! Plus it comes in a big jar & lasts up to 2 months! Love this chicken recipe Amber!
I recently came across a recipe for Swedish, meatball orzo. It’s not actually made with meatballs, but has ground beef orzo, and a Swedish, meatball style gravy, or sauce. It’s made in a skillet on the stove top and takes less than 30 minutes to come together. So simple and so delicious.
I made the Smothered Burritos on Tuesday and the Pesto Chicken yesterday. My husband loved them both but he especially loved the Pesto Chicken. He can’t wait to have it again

I'm all over that Pesto Chicken with Asparagus. Can't wait! For the burritos, I live in South Texas and I highly recommend you give the seasoning Tomate & Culantro (Tomato and Cilantro) by Sazon Goya a try. It's in little packets in in a red box. Talk about flavor explosion! You'll love what it does for anything where it can dissolve - like your topping for the burritos. Also, I recommend 1/4 - 1/2 pack of cream cheese in with the chicken mix vs. the cheddar (or both) and add 1-2 tsp of cumin, then mix. You won't need as much salsa (we don't put salsa inside of our burritos) and the cream cheese will keep the chicken moist. If you can find soft Mexican milk cheese that works well too and adds a very smooth flavor. I use drained Rotel vs. just the green chilis. Sorry! I learned to make Tex-Mex at a young age and love it! But now I'm making enchiladas tomorrow night!

My boys are beef eaters. They're tired of chicken. To be honest, so am I. I hope ground beef can be substituted for the chicken. I know that they'd love the smothered burritos ❤
I love asparagus but never thought of cutting them into bite size. They are going to be tasty. Just started watching your videos. Excellent recipes for family. Yummy, I can't wait to try them.
the second recipe is one i will try , but there is something about tortilla wrapped n covered in sauce when cooked gives it a gummy texture to me and i cant handle it , but the filling looked good so i might skip the oven n sauce , and just brown it in a pan on the stove ... ty for a great video !!!!
