Hi and Bonjour from Montreal Canada. We cooked this dish this evening and it was delicious. For the first few bites, we were skeptic but the taste started to grow on us. We just loved it. The pilaf was above expectation and never realized we were eating cauliflower. Due to confinement, We substituted parsley and walnuts with fresh coriander and pine nuts. We used halibut for the fish. Wow! This dish is incredible! We live in South Africa and my husband caught us a fantastic fresh yellowtail (kingfish), I wanted to prepare it in a way that would do it justice, so it didn't die in vain. I had to adjust the cooking time because the my fish was quite thick but thanks to the brilliant tips and reasons you included for doing things it came out perfectly! We eat a LOT of fish and this recipe is definitely one of the best we have tried! I can't wait to make it again for all our friends. The cauliflower was incredible too! I made this fish and cauliflower on Wednesday, it was amazing......😋😋😋😋😋 None of my kids neither my husband knew it was cauliflower 😁😁😁 it was super tasty, I changed the almonds for cashews and was incredible, thank you for your awesome recipe 👍😉😀

I have salmon, so I will try this with salmon. I just learned after 3 trials with cauliflower, it's basically like a "sponge", it will soak up whatever spice/sauce you cook with. I tried it with BBQ crush peanut sauce, it taste good.

Just made it today ! AMAZING !!! switched almond with sunflower seeds, as my son has allergy to nuts. Cauliflower pilaf was so tasty and yummy. My boys ate it all.
