200g H2O
200g FLOUR
1g FRESH YEAST
Ferment for 12-15hrs (18-22C)
REFRESH :
130g FLOUR
2g SUGAR
80g H2O
8g SALT
(The best to leave in the fridge overnight)
Topping - Roasted peppers:
2-3 bell peppers
2 cloves of garlic
some olive oil
ground black pepper
some salt
fresh herbs such as thyme
