To make perfect and professional level focaccia is easier than you think!
I also thought that this recipe might be useful to people who are interested to make bakery level bread at home from store bought ingredients. So i turned disadvantage to advantage. I was surprised by the quality of the final bread. Really really good.

Focaccia recipe:
👩‍🍳BIGA:
400g flour
240g H2O
4g fresh yeast
💦Refresh:
100g flour
135g H2O
5g sugar
12.8g salt
15g olive oil
2 Step - Refresh-
Add flour+sugar + 1/2 H2O.
Mix for 4 mins
Then 1/2 H2O slowly, salt and finally oil.
Mix 8-12mins
🌱Rucula pesto
60g raw cashews
30g pine nuts
1/2 lemon zest + juice
1 small garlic clove
50g olive oil
salt & pepper

That focaccia is a masterpiece! I like making focaccia, and although I know it might be unorthodox, I sometimes make it using sourdough starter 😅

Wow Kris! Love this new video. MORE please. It looks wonderful there and I hope you are enjoying shopping and finding new things and places to eat. Yes i enjoyed a lot going to the shops, discovering a new variety of vegetables/ingredients. I need to adjust to what i was used to in the UK. Love the quality of food here! I use method like mix everything and keep in chiller for 14 hours ...then take out the dough mix it and use it .

Hi, thanks very much.So for the 2nd time took 2,5h, but depends how warm your place is. what you need to see is double the volume of your dough. And in the oven I baked on 250C for 12-14 minutes. please share with me your result later😊 good luck!

@@KrisKazlauskaite So to recap, biga 12 to 14 hours, first rise 2.5 hours, second rise also 2.5 hours? Yesterday for me the second rise was rather short (like 15 minutes) because I ran out of time and did bake it as you said. I can add that the dough was running as it is a high hydration dough. When the first proofing was done I decided not to shape it (I don't have enough experience). I just poured it carefully on the baking paper and covered it with olive oil. I was very satisfied with the result. It did rise and was fluffy and my family loved it. I will try to modify next time. Thanks.

@@daliborkuhinek this recipe requires to knock back the dough after first rise. So you did it correctly, biga 12-14 hours, then refresh and leave it till its doubled, then knock back and leave it to rise again. Not sure if I understood it correctly what happened on your second proof but if the result was good then everything is alright!:) i know it’s a time consuming bread but it is totally worth the effort:) do you have pics? I want to try this recipe but I only have instant yeast, how many grams should I use instead of fresh yeast, and only in the biga or also in the refresh? Thanks in advance.

Hey Tony, so I would divide fresh yeast into 3 for instant yeast, so if this recipe asks for 4g of fresh yeast I would add around 1.3g instant yeast. And yes the yeast is only used for BIGA, then we only do the refreshment :)) hope that helps! enjoy baking! 😊

I stumbled on your channel... I'm in love!! I dreamed to be a baker but I was too afraid to follow it, so I'm a home baker. I love baking focaccia! However, when I bake it, it always gets stuck to the pan. How do I stop this? Am I not using enough olive oil on the ban? Am I using the wrong pan? My oven runs hotter then most ovens, so that the problem? I would love advice from a baker. Stay safe and happy.

(I dont put too much olive oil underneath the dough) are you sure you develop gluten well? what pan do you use? (which metal)

@@KrisKazlauskaite Hi! Okay, so i dont use parchment paper and the pan i use a aluminum pan when i bake. I think the dough have developed enough gluten, but im not too sure. I think the issue is the oven i use. It runs super 🔥 so i think the oven makes the oil from the bread so hot that it almost fries it and it gets stuck to the pan. Thank you so much for responding to my question!

I don't see you were adding the olive pieces to the dough mixing, there is only garnishing on the top of the dough but when you sliced the focaccia i can see the pieces inside the bread.) How its happened? its just a doubt!

Hey! Thank You for your message! I always accept all questions and doubts so happy to answer. :) I think you’re referring to the very end of the video right? So before releasing the video I do many versions of the recipes so that focaccia was with the olives inside, you can mixed them on the last fold before proofing. You need to drain them very very well though. You can also mix for example sun dried tomatoes, tastes very nice! Hope I answered your question! Have a great day! ☀️

hey! never made focaccia with sourdough, especially if you make this method with BIGA it's quite important yeast element. But go ahead and try, would be curious to see the result :)
