I also thought that this recipe might be useful to people who are interested to make bakery level bread at home from store bought ingredients. So i turned disadvantage to advantage. I was surprised by the quality of the final bread. Really really good.

Focaccia recipe:
👩🍳BIGA:
400g flour
240g H2O
4g fresh yeast
💦Refresh:
100g flour
135g H2O
5g sugar
12.8g salt
15g olive oil
2 Step - Refresh-
Add flour+sugar + 1/2 H2O.
Mix for 4 mins
Then 1/2 H2O slowly, salt and finally oil.
Mix 8-12mins
🌱Rucula pesto
60g raw cashews
30g pine nuts
1/2 lemon zest + juice
1 small garlic clove
50g olive oil
salt & pepper
