Just tried your kapoon today. I’d have to say it’s full of flavor. We didn’t have to add anything extra just the lime. I added a little bit of sugar since I like mine sweeter. Thanks for your recipe. I’m definitely making this again.😍

Thank you for sharing your Kapoon recipe. Where do you buy your pork meats like pork trotters? Can one easily get those pork meats at the Hmong Market Town Place or an Asian Food Supermarket?
So do you use both the pork feet and the ground pork? Just curious how much meat you use since your list said chicken or choice of meat. But when you made the paste you also added ground pork. Also, which bamboos do you typically use then? Thanks!
Yes I use both pork feet (1pk / 1lb) and ground pork. I leave the pork feet in the broth but I stir fry the ground pork with the herbs and curry paste. I think I used 2 -3 lbs of ground pork in the video but I would prefer 1-2lb (if you don't want a lot of meat) . when I'm making it with chicken I use a whole chicken or 4 quarter legs. Lol For the bamboo shoots I use the Dragon Fly Brand "Tip Bamboo Shoots" ( big round ones). sometimes they're in a plastic bag at the asian store. I hope this helped. For those that cannot tolerate spice like the 2 cans of red curry- will 1 can taste as good?? My kids cannot do too much spice but love eating the noodles.
What size pot did you use? Is it a 32 quart pot? It looks like it's filled 2/3rds full. Also, that looks like 4-5 lbs of pork feet you used to make the broth, correct?
Yes it’s a size 32 I fill it half way because the coconut might overflow the pot. And I add more water to fill to the top after the coconut. Flavor will still be there. For the pork feet, i did use for the broth. I would do at least 2 lbs just depends on how much feet you want. Lol. If you want to use chicken. One whole chicken would be enough.
I didn't believe this at first but you don't have to wait for the water to boil before you put the noodles in. If you put the noodles in right away, it'll thoroughly be cooked when the water boils. I usually let it cook for another 2-3 minutes after boiling point.
Your written recipe shows 3 tbsp each of chicken broth powder and salt...but you mentioned using teaspoons when demonstrating. It looks like you did use 3 tbsp of chicken powder, but maybe 3 tsp of salt? Also, you mentioned seasoning your ground pork with salt, black pepper, and garlic powder...I assume you season it with a tsp of salt to each pound of ground pork, which is the typical ratio for salt to protein? I guess the black pepper and garlic powder would be half that amount then?
Some what a lot but I think its worth making it with those ingredients, it has somewhat of a difference taste compare to the other kapoons. more flavor and heart warming I think. lol I haven't gone back to how I use to make it ever since this recipe.
The written recipe is flawed!!!!! The written recipe calls for 3 table spoons of broth powder and salt each. She uses tea spoons in the actual video . Op please fix it so others don’t mess up like we did and waste a day/money.
