FULL RECIPE
1.5 kg Oxtail
2 tbsp Cooking Oil
1 tbsp Brown Sugar
1 Onion
2 Garlic Cloves
1 cup Mixed Bell Peppers
1 tbsp All Purpose Seasoning
1 tbsp Oxtail Seasoning
1 tbsp Curry powder
1 tsp Chilli Flakes
1 tsp Paprika
2 tbsp Tomato Ketchup
1 cup chopped Tomatoes
1 cup Red wine
2 cups Chicken Stock
Cooking Time - 4 hours
1. Heat some oil in a pot; add the sugar and allow it to caramelise (careful not to burn)
2. Add oxtail and fry until golden brown and remove from pan
3. Add the onion, mixed bell peppers and garlic and fry until soft
4. Add all the spices and allow to cook for 2 minutes
5. Pour in the tomatoes and allow to cook for a further 2-3 minutes and stir in the ketchup
6. Pour in the red wine and place the oxtail back into the pan. Top up with chicken stock and cover with a lid.
7. Braise in the oven on 160°c for 4 hours or until tender
