It's physics young man, the cheese is wrapped as a solid and melts when heat is applied, this causes the air gap in the egg roll. Glad it had a good flavor.
More specifically the released heat will cause the average kinetic energy of the surrounding particles to increase, forcing a pressure on the surface of the layer which causes an expansion.
They should've frozen the cheese first before filing the egg roll or used harder cheeses, that seems like such a culinary 101 mistake I'm hoping Gordon Ramsay calls whoever made it a doughnut.
@@metaLungiezwouldn’t the cheese not melt regardless since it’s you know going in the fryer? What they should’ve done is make the roll a bit smaller or add more cheese so when it melts it’ll least fill the gap
@@kllaskullz Yea, but it melts more gradually, you take it out the fryer before it's completely done and let the residual heat bring it up to temperature, kinda like how you cook a brisket. Another thing is they could use a lower moisture cheese, for instance mozzarella cheese sticks don't turn into complete goo when you cook them, they still have chew.

The philly (filet) looked 👌 but i can see it needs a lil bit more seasoning. I absolutely luv a beef sandwich in any form. I agree on that last sandwich looked crispy as hell but lots of ingredients sometimes less is more
