Hi Gerri. I tried this condensed milk recipe yesterday but it came out all wrong. It resulted in a very hard rock-like “condensed milk”. I don’t know where I went wrong. I used 100% erythritol. When the cream, butter and erythritol reduced in quantity over medium heat, I turned off the stove anset it cool on the counter before placing into the fridge. I checked it after about 2 hours and it was like stone in a bowl. Please is there any hope to save this recipe or should I toss it in the trash? Also what do you think went wrong? Thank you.
I saw on another recipe site that this can happen with erythritol. Here are the instructions for reheating that I found: ------------------- Instructions for REHEATING condensed milk that has been stored in the refrigerator: Note that the homemade condensed milk will harden, especially if stored in the refrigerator. To reliquify, boil some water in a small and deep sauce pan. Remove the sauce pan from heat and place the container of the condensed milk into the hot water. Stir occasionally as the solid is turning back into a liquid. Stirring is important in order that all the ingredients stay emulsified. When the condensed milk has almost completely become fluid, remove the container from the water and stir to combine. Use at room temperature. CAUTION: Heating directly in a pot or in a microwave will change the taste and/or the texture.
Hi Shahilagh, we rarely use stevia on its own because it has a distinct taste that can overpower the rest of the ingredients. Thats not to say you can’t try it, just from our experience stevia can ruin the taste of a lot of things when used on its own.
@@MyKetoKitchen @@MyKetoKitchen I think there was misunderstanding in understanding my question. I didnt ask if u like stevia or not. I asked if I use drop instead of solid sugar, it will affect the volume of the mixture. will it work to create this condensed milk without any sugar? only by mixing oil and boiling mild?
I haven't made it yet, but (IMO) I would think that the absence of a granulated/powdered sugar would not result in the thick syrupy product that you would be hoping for. :/
Depends on how well behaved you are 😉 But in the fridge for up to 2 weeks, some people freeze it for a few months but we found it doesn’t seem right once thawed.
