Hi Andre! Thank you for watching our video and tuning into our channel. And you are correct about the first fry being at a low temperature about 315F. However, this is true if you have a big size fryer in a restaurant. But, when cooking at home, we have take into consideration to increase our temperature a bit to compensate for the lost of heat once we add in our chicken. In our case, around the 3 minute time stamp in the video, we did mention to preheat our oil to 350F and later on in the video, we mentioned to increase the temp to 375-400F. So our steps were to set the oil to 350F and fry the first time for 4 minutes, and then take the chicken out to let it rest for about 5 minutes or so and then set the oil b/t 375-400F for the second fry for a quick 1 minute (and add in the basil leaves for 10 secs before taking everything out).
