Jeremy, I have to say this was the best video you’ve done! I’ve been a welder/Fabricator for almost 50 years & a BBQer for almost as long. I’m my new retirement. I remember being invited to a cooking of a whole hog party. The pig 🐖 was a little bigger than the one shown, but the cooking method was different. It was cooked in a pit with coals and it was also a near day process to cook. Once it was done there was barely anything left to eat it was so delicious 😋! Tasty memories!

In many Asian cultures, the roasted suckling pig is truly something special. Very few restaurants can do this extremely well but the ones that do, the way it's roasted is something that can only be experienced and never explained to anyone how good it is. Some will cook it similar to yours but doing a roast the skin becomes super crispy and smooth, not crackling, and retains its thinness because the fat underneath has completely rendered.

You should search Casa Botin (Madrid Spain). Oldest restaurant in the world (founded 1725). Their specialty is roasted suckling pig.

One of the best dishes in Portugal is Leitao - grilled suckling pig (leite means milk in Portuguese). It has a crispy skin, and the meat very soft and tender. I attended a Leitao festival this weekend and had the best Leitao I had so far. The one you made looks amazing.

Received an application error when trying to enter so I emailed support. They sent me an email with a link that directed me to a cart with the $50 coffee mug in it. Now when I try to submit my information for an entry it just goes to that cart and I don't think I can remove the mug. Grill looks awesome but a $50 lottery ticket is pretty steep. Also when I click the link at the bottom of the page for contest rules, it takes me to a page with all of the contests but this one isn't showing up. Probably explains why there haven't been a lot of entries so you may want to reach out to them and see if it can be fixed.

This is a regional dish in Italy, look for Sardinia porceddu. It's basically a low and slow on a rotisserie or skewers over wood coals

Split 55 gal steel drum vertically (2 for 1 bonus). Notch the top to hang the pig with wire or chain. Small steady fire at the back of the drum. Efficient, effective, low maintenance, and cheap. Sometimes referred to as "cajun microwave."

We used to do these several times a year for cochon de laits and man are they fantastic. We always used a vertical rotisserie though.

South Eastern KY boy. A few fourth of Julys ago, we had done this with a potbelly pig. We ate on that thing for about 3 days. This takes me back to it. I started the pig about 5 in the morning and just let it go for about 9 hours. We had it good! This video makes me want to do it again.

The last four times that I've done pulled pork, I've used a butt, picnic shoulder, and a 5lb loin. The combination of cuts adds so much more texture to the pulled pork. It's sort of a very scaled down version of whole hog bbq. I wish I had a pit big enough for a whole hog, but it is what it is.

this is great! im fortunate that i live in the best neighborhood in america, every september my cul de sac gets a pig and one neighbor made a smoker with a rotisserie spit built into it, and we all take turns shoveling the coals evenly throughout the night. this reminds me of that and I know how damn good that tastes. love it!

We do this in Louisiana all the time. It’s called a cochon de lait when it’s a suckling pig or a boucherie if it’s a grown pig or hog

In Hawaii, cooking whole pigs is very common and done for every event, party, wedding, or sometimes for no reason at all, other than it’s just spectacular! Usually slow-smoked in a huge Imu (underground pit), with Kiawé wood (Mesquite), in a chicken wire basket covered with banana leaves to add and trap in the moisture. Every thanksgiving my neighbor would fire up his Imu and cook a whole hog. He invited the entire neighborhood to add whatever they wanted to the Imu. Most people brought whole turkeys or chickens, which were added after the hog was mostly finished. The pork was always the star of the show of course, and just out of this world good! Super tender and juicy. The only thing missing was a crispy skin since it won’t crisp at all in an Imu. But I’ve had suckling pig cooked on a rotisserie over an open fire and the skin was really crisp and excellent. Never seen it done the way you did yours but it obviously came out incredible. Great job! 🤙🏼

Hi Jeremy, I had a question about your coals at 10:25, any time I spread mine out thin like that they go out within a few minutes, so I have to keep them bunched up to keep the heat in them. (using hardwood lump charcoal as well as just burnt down timber) how do you keep yours alive? is it an air flow issue?

This is exactly why traditional South Carolina BBQ is always whole hog cooked on an open pit😊 They've been doing it that way a couple hundred years👍

I grew up in Mansura, La, the Cochon de Lait Capital of the World. Our method was hanging vertically and spinning the pig to evenly cook it. Usually took 8 to 10 to cook. Either way that crispy skin and tender meat are heaven.

I’ve always wanted to cook a whole hog, but I just haven’t worked up the courage to try it. My dad’s family used to get together once a year and do a hog and a goat. It was an all day process that started at 4-5 o’clock in the morning, and we were usually eating around the time the sun was setting. I always looked forward to it. It was the best meat ever.

What WE do: get 2 sets of “burnt off” mattress springs. Lay the hog face down on the ground, pulling the front legs as far to the side as possible. While your buddy stands on the back of the pig, slam the base of the neck with a 10 lb sledge, breaking all those upper bones making the pig flat. Lay the pig on one set of bow springs and wire him to it. Lay the other set of springs on top and wire everything together. You need 2 long poles to put through the springs (for flipping). Get some hot coals and you’re good to go We also cook bbq goat in a NEW galvanized 30 gal trash can.
