I used to be able to make deviled eggs, with no problems, for years, then I couldn't. Peeling was the worst, taking most of the whites with it. idk if eggs changed, or I did, who knows. I tried so many ways from the internet I was just going to stop making them as it was taking me 2 dozen to make 1 dozen good ones & eggs have gotten hella pricey. This method put me back on track with the most perfect, easy to peel, beautiful hard boiled eggs!! Thank you!!!!! I did peel under running water and most of the time the water would push the egg out of the shell once you peeled the big end off. Tip: place your egg carton on it's side at least 24 hrs before cooking. You'll end up with the yolks being closer to the center of the white, making some beautiful deviled eggs.

I will never be able to put into words how truly thankful I am for this. The shells literally fall right off and the yolks are a perfect sunrise yellow (not a hint of gray). When I would do them myself the shells would take away most of the whites when peeling and they yolks were just blah. Thank you so much!

The important parts are making sure (a) the steam stays in the pot when you add the eggs and (b) the eggs are cold when you put them in the steam (which is a little hotter than boiling water). That causes the membrane under the shell to contract: since the shell stays the same size, peeling is easier. Also works for soft-boiled eggs, which should take only 7 minutes.

I put the water, steamer basket, eggs (eggs don’t touch the water) in a pan, cover, put over high heat and set a timer for 17 mins. Voila! Easy peel, no fuss hard boiled eggs

You don’t put eggs directly from frig into a steam basket they’ll crack. What she showed is exactly what I did and 1 egg cracked as soon as I put lid on outta 4 batches 1 egg cracked outta 6 in 3 batches I made. I put the eggs of the last batch at room temperature for 6 minutes and none cracked. So this method is wrong. Everything she does is correct except putting eggs in directly from fridge is wrong. Shocks the egg and crack

I use my Instant Pot: High pressure for 4 or 5 mins, quick release, ice bath. They always peel perfectly.

@@CreachterZ Funny, I tried this with two eggs, and they cooked well but I had a time peeling them, so I went back to steaming. I will have to try again. The thing I just learned is I can use my air fryer, with no water, just 250 degrees F for 17 minute then into an ice bath. They tend to have a flat spot on the bottom but it's quite handy if I just want one egg to pop into a salad or take to work.

I do 5, 5, and 5. 5 cook, 5 natural release then quick release and 5 cold water. Peel perfect. My kids gave me the yellow egg trivets and I can stack them.

I don’t use the steamer basket and I have them in soft boiling water for 11 minutes then straight into the ice bath. Easy peezy, perfect every time.

I have steamed eggs before, but I think the steamer basket in this recipe is mostly or entirely just for ease of transferring the eggs to the boiling hot water gently instead of using something like tongs or a spoon. It's easy to drop the eggs with those. It's also easy to accidentally crack an egg if you just drop them in into the pot with your hands instead of lowering them into the water before releasing them.

Look up Kenji Lopez Alt's videos and posts on Serious Eats. His extensive testing showed that starting in cold water makes eggs harder to peel than starting with boiling water or steam.

I have graduated to a bamboo steamer because it avoids the high heat conduction of metal . I get fewer eggs with the thin blue line on one side of the yolk which was against the metal. Also a cold water from the tap soak seems to work as well for me as the ice water. Tap both ends of the cooked egg and roll it. A teaspoon used a peeler is quicker and more efficient than finger tips.

I just use a small spoon and some running water. The spoon is dull so you can squeeze it between the shell and egg. It's also about the same curvature of the egg so it slides under a good size/amount of shell. The running water is to wash away the shell that gets stuck and for the water to go between the egg and shell to create small airpocket so it's a little easier to peel bigger chunks. Use warm water if you want to make it feel like the egg is freshly hot. If you're doing more than one egg, then ice bowl of water works too but then your egg won't be hot.

Funny enough, we use one of those single use egg cooker and it turns out fine every time. It takes a little water, set-and-go, and finish in the ice bath. It cost us $15 and we’ve used if for years now. I know, I know…but it works great!

I've done this method for years and it always works, whether the eggs are fresh or not. I also use this method for soft cooked eggs, 7 and a half to 9 minutes, depending on how soft you want the yolk, and just run them under cold water until they are cool enough to handle, but still hot to serve. Also I only use enough water to steam the eggs, not boil them. It takes a lot less time and energy to boil a half inch of water vs a whole pot full.

This is similar to what I do and it works every time. I just wish I would have figured this out when my kids were younger. LOL The only difference with the way I do it is that I boil enough water to submerge the eggs because I don't use a lid. Once the water is boiling, I add the eggs to the water and boil them for 13 minutes, like you mentioned. I then transfer them to the ice water bath but again I don't measure anyting. I let them sit in the ice water for about 10 minutes. I use what I need and refrigerator the rest. I've been doing this for the last couple years and it has worked 💯.

I bring my eggs to a boil and boil 1 full minute than I turn the heat off cover them with a lid and leave it in the same burner for 15 minutes.Place them in ice water for about 20 minutes and they are perfect every time.

An advantage of steaming is that it takes much less time to bring a half inch of water to a boil for steaming than at 2-3 inches of water needed for boiling. The whites are a little more tender from steaming compared to boiling.

"Pete & Gerry's" organic eggs (nearly the only eggs i buy) turn out perfectly every time i boil a batch-- no special technique required. I can also recall that when boiling eggs as a child, while knowing nothing about steamer baskets, half the whites were never lost in peeling. My guess, super industrialization of egg production has changed things.

Yes. Did you listen to what she said at the timestamp you provided? By placing them in hot water instead of cold, the whites will set instead of fusing to the shell. What’s your confusion other than basic English comprehension?

I've done this twice and it works great. THANKS... i am now trying shorter time frames in the heating process . 10 min leaves a solid but moist yolk. my next try will be for a slightly liquid yoke maybe 6 minutes.

My method is similar - I bring a pot of water to a boil, and while it's coming to a boil I put a dozen eggs into a strainer and let it sit in a bowl of water warming the eggs slightly. I find this helps to reduce thermal shock & cracking when I put them into the boiling water. Once the water is boiling I use the strainer to carefully put the eggs into the boiling water and let them boil for 10 minutes. Then I turn off the heat and let them rest in the hot water for 5 more minutes. Then I scoop them out with the strainer and put them into a bowl of cold water and sit for at least 5 minutes. Come out perfect every time. As for peeling, I use Jamie Oliver's trick of crush-rolling the eggs on the counter, enough to crach the shells all around. Then they just peel off in long strips held together by the membrane.

This recipe made my automatic egg peeler work even better! (looks like a white plastic Concertina cut in half and oriented vertically, you quickly & firmly press down on the bellows & force the egg through a hole in the bottom of the device, leaving the shell behind)

There is a kitchen device like a plastic roller (like a plastic toilet paper roll) for removing the garlic clove from its shell. Put the boiled egg into the plastic roller and roll the egg with a little pressure. Only the waist of the eggshell gets broken. Remove the egg from the roller and pull apart both halves of the eggshell. This is best done warm-hot with the egg and shell still having some internal steam and moisture - allowing for separation. Eezy peezy !

I also steam for 13 minutes but don't bother with the ice (thanks to Kenji & ATK). I just dump cooked eggs into bowl of cold water for a two or three minutes until they are cool enough to handle. Then I crack both ends and roll the shell gentle pressure to crack the sides. I start peeling by pinching the fat end where the bubble is. Rolling releases the egg from the shell do it slips off easily in 2-3 big pieces. Perfect peeling 99% of the time. No gray ring on the yolk. White is a bit more tender than boiling water method. 6 to 8 minutes for soft boiled, depending on your taste.hem

I do it this way and always have success. Choose eggs that have no cracks in them. First I get a pot large enough to hold all the eggs I want to cook in a single layer. I add enough water to cover all the eggs and bring the water to a boil. I then use a large spoon or a spider spoon to gently lower one or two eggs at a time into the pot of water.When they are all in and boiling boil them for 13-15 minutes to a hard boiled stage. Immediately remove them from the burner and from here you can either use the ice bath method of a bowl with lots of ice and water to fill it and place the eggs into it until cooled down completely. Or you can place the pan in the sink and run cold water over them checking them every so often to see if they have all cooled down yet. Now literally crack the egg and then roll it on a hard surface cracking the rest of the shell completely. Now hold it under running water and peel from the fat end of the egg where there is usually an air pocket that makes it easier to start peeling it.use the running water to sort of push under the edges of the shell lifting it slightly for you to peel. I have been doing this for decades with great success.

Use a needle to make a tiny hole at the thick end of the egg(s) shell. Place egg(s) in cold water (just from tap nothing special about it) half way up, put on lid, turn on heat 4 out of 6, when water is boiling turn down heat just to save some energy and get less steam in your house, simmer for 5 minutes. Remove eggs with a spoon and let them cool on the counter. When pealing tap on something hard to brake theshell the roll gently on the counter and peel. Let the water cool down and use it to water your plants.

I use the American Egg Board method of making hard-cooked eggs. One additional AEB tip is "Very fresh eggs can be difficult to peel. To ensure easily peeled hard-boiled eggs, buy and refrigerate them a week to 10 days in advance of cooking...."

Tap the more pointed end of the egg on the counter until it you hear it crack. Your not trying to break it, just crack the shell slightly to allow the hot water to seperate the membrane from the egg white. Boil normally and put under cold water... break the shell by tapping under running water and the shells nearly fall off, peel them one-handed more often then not!

This is same technique as the one is use from Kenji Lopez Alt`s food lab and works well.Sometimes an egg just has a mind of it`s own and is just plain difficult to peel.Also if one makes a pin hole at larger end of the egg a well rounded shape is achieved. So glad to have found this technique after all these years.

I like my yolks a little jammy, so I boil 6 or less eggs straight-from-fridge into boiling water for two minutes, turn off the heat, move it off the burner and put a lid on it. Let sit in the hot water for 9 - 10 minutes and then into an ice bath. A large spider strainer is perfect for moving in /out of the boiling water and ice water. Just like in this method, cold to hot shocks the shell / membrane away from the hard-boiled egg making it easier to peel. Not 100% but very consistent for me. And a little Trader Joe's Everything Bagel Seasoning as a finish isn't such a bad thing.

Give gentle shake to boiled eggs (2-4 at a time) in a hard jar/glass to crack the shells.. After that you can hold them under running water and the shell will practically fall off.

Note: Peeling, my eggs was a nightmare the other day. But I had purchased super fresh eggs from a farmer's stand and I did learn that with fresh eggs the white will stick to the shell, and it's best to use a little bit older eggs, if you want to make boiled eggs.

Doing a pH shift by adding 1\3 cup of vinegar makes it even easier to peel.

Sounds and looks great! The one caveat .........super fresh eggs don't cooperate. The albumni hasn't had a chance to separate from the shell. I raisd chickens for 15 years and would mark cartons and stash in back of fridge for 2-3 weeks before I could hard boil. Yet, for store bought eggs this looks wonderful!

Hi, I love this, and thank you, but I agree with Paul Williams. I use Instant Pot, eggs straight from the refrigerator, 5 minutes pressure cooking, quick release, cold or just simply big enough room temperature water bath so it can absorb the heat well. Wait only a few minutes until the eggs are room temperature, as little as 5, I think, and they peel easily. Perfectly cooked. My guess is the high pressure does something to separate the egg whites from the shell. I haven't tried this with more than 3 or 4 eggs, so I don't know how versatile the method is, but it's the best I've found after trying numerous times with just boiling and cracking by shaking in a container, running under water, etc., etc. The pressure cooker method doesn't require much water at all. Only enough to produce steam. Less than a cup. So, it's fast. And it's much faster than getting a whole pot of water to boil. For me, hard boiled eggs is a problem solved already. It just works. I'm still trying things for multiple poached eggs (poached, not heated by something in contact with water, like silicone, because in that case steaming is just the best method, I would guess.). I have found poachies I bought on Amazon work very well, if you get the timing just right. I think it's kind of a filter to get rid of the wispy parts of the whites, you know the ones that separate and become streams if you try the water funnel in a pot on an egg that isn't so fresh (try making three or four with this method; I can't!) , while keeping the yolk and firmer part of the whites to cook inside the paper. I've tried a number of gadgets, including microwaving a device that uses warm water ... anyway... Hard boiled or medium boiled eggs. For me, solved. Pressure cooker. Poached eggs... still working on that. Thank you guys. I really appreciate this community.

When I was a kid (I'm 60 now) I never experienced a hard-to-peel boiled egg until well into my adulthood. Never. What changed in eggs between past and present? I also notice that yolks break way, way easier when frying them. What changed?

The more important thing is to start them in already hot water or steaming so the egg will fuse less to the shell

What about storing the hard-cooked eggs in the frig and peeling them at a later date? How long to keep? Will they still be easy to peel? Camping, traveling, etc!!
