Someone asked me to make this, meat floss cheese stick bread with a lot of sauce, which is very popular on Douyin recently. I will share with you my version, which is definitely ten times more delicious than the sold one.
The sauce we made ourselves is absolutely nutritious and delicious. It tastes like a pulp!
recipe:
Medium seed: 420g high-gluten flour, 20g sugar, 280g water, 5g high-sugar resistant dry yeast,
First make a medium-sized batch according to this recipe, knead the dough and ferment it at room temperature. Because there is a lot of yeast, it rises very quickly. Pay attention to the condition and don't over-rise. You can send it to 2.5-3 times the size. If you want the slightly sour taste of old bread, you can make it 3 times as big.
Main dough: 180g high-gluten flour, 40g sugar, 40g syrup, 7g salt, 25g milk powder, 2 eggs, water? , 60 grams of butter
After the medium-sized dough has risen, put it together with the other ingredients and knead the dough. The reason why there is a question mark about water is to choose whether to add water or not based on the condition of the dough. If your eggs are large, you basically don’t need to add water. I used 110 grams of two eggs, and then I didn’t add any more water. If the dough is not soft enough after mixing, add some more water. Just master this flexibly yourself.
Sauce: 3 egg yolks, 50g sugar, 1g salt, 10g low-gluten flour, 10g cornstarch, 250g milk, 20g butter, 50g cream cheese, 100g light cream
Surface decoration: chopped green onion, white sesame seeds, custard sauce, pork floss

哪种糖浆都可以,不建议省略,主要是给面团保湿用,防止老化,可以换成等量蜂蜜
