The butchers Knot. Every butcher has their own knot, they are as unique as a finger print but an important part of butchery. It's used to tie up roasting joint and much more. In this tutorial you will learn mine, it's the knot I've used for 37 years and counting.
I have slowed the process down and brought the camera in close so you can follow along.
Remember... Practice makes perfect, you may not get it straight away but, once it clicks you'll never forget it.

Almost 50 years ago I worked at a glass factory that had its own cardboard manufacturing plant. One of my jobs was to palletize the stacked and folded boxes. Thank you for reminding me how this knot worked. We used a ring knife to make the cut.

Bravo I just retired after 50 years in the meat business and if I ever have to tie another knot like that lol The funny thing was the old butcher that showed me how to do it taught me to always have my boning knife in my hand while I was tying it so you didn't have to pick the knife up and there's one day I was tying a rib roast and I put the knife down and he caught me he came over picked up the knife and threw it in the garbage can he said if you're not gonna use it why keep it I was speechless but I learned how to hold the knife in the one hand and tie the knot with the other. The last butcher shop I worked in that Christmas I think I might have tied close to 150 whole filet mignons and at least 60 or 70 whole beef ribs I couldn't move my hands after that. I now have neuropathy in my hands and I can't tie knot or even pick up a knife good. I'm also 70 years old lol keep up the good work teaching people

I finally got it! I’ve been following you for years Scott, and been trying to get the knot. Every time I’d do it, it wouldn’t cinch down like that. I just kept doing it anyway since I was able to make it work. But it was that bit at 4:39 that did it: You’ve got to go through the loop from left to right. I’d been going right to left.

For those who may need a better visual, he is tying a knot called a figure 8, around the working end of the string, then tying a safety at the end. Google a picture of a figure 8 slip knot for further reference.
