This used to confuse the heck out of me until I made a point of paying attention so I could remember which kind I liked. I like the chunk lite for tuna salad, but use the solid white for most everything else. And eventually, I decided I liked the vegetable oil variety best for flavor. It took me a long time to realize the oil was more flavorful to me for some reason. I always assumed I'd prefer the water and was wrong when I actually began paying attention and making the effort to learn just what the heck the differences were. Before then, it was all just tuna and I didn't understand these differences. I see some interesting recipes on this channel, thanks in advance. I've really been grubbing on Bumblebee tuna and salmon recently for the health and affordability aspects. These vids make me feel even better about it. I figure BumbleBee must be special, cuz I got cornered into trying the big competitors once and that was enough to make me decide on Bumblebee only. Sorry for rambling. I just like these vids and that the company shares these and that they really have an appreciation for what they do. Its sets a standard, and Im grateful. ♥

Educational videos like this can be helpful. But your method of purchasing and sampling a variety of tuna styles and from different brands, being careful to note what you prefer, is the best way to learn your preferences. I have found inconsistencies, however, with tuna within the same brand and labeling. The texture and flavor can vary quite a bit even if you believe you are purchasing the same product each time you shop. You just hope it isn’t too far from what you were expecting b

Thanks.. I just buy the Chunk Albacore, I can always break it up in the strainer when making tuna salad. Since I put other ingredients into my tuna salad as most people do, I tend to like my tuna dry. I find the hole Albacore once drained is very dry, but moistens right up with the mayonnaise. Since I add relish, the dryer the better. I mix up my salad right in the strainer, that way excess water is removed and also excess mayonnaise or juice from the relish can drip away, plus I don't dirty a bowl if going directly on bread when making a sandwich. I found the tuna was hard to drain and was wet.

Another important thing tp note, especially with the cheaper tunas like this is that a lot of them keep costs down by adding lots of soy as filler. That is one o the reasons they are so watery and much harder to drain. Soy retains water much better than tuna does. If you look you can find soy free tuna. It costs a little bit more. Just read the ingredients on the back of the can. And it usually comes in a gold can and has words like "premium" on it. It is a vastly superior product.

Or, OR...you can buy solid tuna and break it up into smaller pieces, thereby avoiding the friggin' mess you always get while trying to drain the chunk light tuna (or what I like to call 'slivers of tuna that you simply cannot drain enough of the water out').
@user-hz5yb4bh5v
@user-hz5yb4bh5v 3 года назад
First I cut the can top completely off, then used it to squeeze out as much of that water mess as possible, then I dump the tuna onto several layers of paper towel sheets, and squeeze out the water - the entire process is a mess. I thought about using a strainer, and maybe I will give that a try with the second can. But that is also going to be a pain in the wazoo mess. The other day at the grocery store, I was hurried and didn't pay attention well enough. I saw what I thought was a sale price on tuna packed in water and grabbed two cans. When opening the first tuna can, I was appalled at that sloppy, watery mess of tuna flakes floating in way too much water. I did not see "light" tuna or "chunks," just the watery mess of tuna flakes. I guess I had not used anything but solid white or solid Albacore, for as long as I can recall, decades. Willow, whose manner of speech is that of a 13 year old girl, pronouncing, "fesh," instead of "fish." Hilarious.
@xavierkoolat6926
@xavierkoolat6926 7 месяцев назад
Yeah, Jiggerj and user-hz5yb4bh5v, you should DEFINITELY buy and eat the solid, white, more expensive albacore with the maximum amount of mercury in it. That way, since that's your favorite, you'll be apt to eat a LOT more tuna dishes and sandwiches weekly (and hopefully daily). You'll also die sooner cuz of the greater quantities of mercury you'll be digesting in shorter periods of time. I want to see more people like you eating more solid, white, more expensive albacore (canned tuna) to cause shortages of that type which will drive up the price of that type of "tuna" and then perhaps lower the price of the less desirable "chunk light tuna" (my favorite) for folks like me. I have always preferred the taste AND flavor of less expensive chunk light tuna for ANY type of recipe, whether it be for sandwiches or enjoyed separately by itself. It's fish. I don't want to think I'm eating chicken. As for using solid, white, more expensive albacore in recipes, I can substitute canned chicken cuz that tastes pretty much the same as the solid, white, more expensive albacore, after adding condiments and seasoning. Bon appetite.

What about the mercury level?
@BumbleBeeFoods
@BumbleBeeFoods 6 лет назад
Many types of seafood (including tuna) contain minute amounts of mercury. The mercury level depends on the size and age of the fish, and the area of the catch. Commercial tuna is caught in the ocean far away from coastal areas where industrial discharges or emissions and the use of chemical compounds containing mercury can pollute the waters. That fact, combined with the essentially constant levels of mercury in tuna over the past 100 years, suggest that the miniscule amount of mercury that does exist in tuna is naturally occurring. Nearly all fish contain traces of methyl mercury. Canned tuna meets all health and safety standards set by the FDA, which has established the maximum safe level of methyl mercury allowed in commercial seafood at 1.0 parts per million. In the latest product survey by the FDA, canned light meat tuna averaged less than an eighth of that amount, and canned albacore tuna averaged about a third of the maximum safe level set by the FDA.

Since this clearly is not mentioned in the video since its posted by Bumble Bee I'll lay it out for you. Solid white albacore is the best quality you will get. Higher standards are met for the solid white pieces that are canned. The leftover scraps from that that didn't meet the grade are then called chunk white. Still good, but not the highest quality. Chunk light is garbage. They take millions of garbage fish and combine them all to make a blend of fish. Its typically fattier which is why the flavor is stronger aka more fishy. TLDR; if you want quality go for the solid white. If you want quality, but don't want to waste time chopping it up yourself for a tuna sandwich or salad then go with chunk white. Get chunk light if you're poor or just like bad things.

An albacore fish is NOT the bigger of all the species of tuna. It IS, however, slightly bigger than the common skipjack tuna found in your can of Chunk Light Tuna. The bigger species are: Bluefin (not used in canning), Bigeye (not used in canning), and Yellowfin (which can also be found in some cans of chunk light tuna). So, actually, albacore is on average about a 20 lbs. fish. A skipjack tuna is slightly below that (on average). A yellowfin can be much bigger and well above 100 lbs.

I disagree with your uses for the different kinds. I only use the chunk light (stronger flavor, more moisture) in tuna salad sandwiches. The whites are too dry and don't have enough flavor. I would use the whites for casseroles because the flavor is so mild and when I want a casserole I don't want to be tasting heavy fish flavor. As for sauces, yuck. I buy my fish sauce from the Asian section. And for fish tacos if you're using anything less than fresh whole fish you've lost me. I am suffering through a Albacore salad sandwich right now, which is why I looked this video up, and it is no bueno. How does something manage to have no flavor while simultaneously being the fishiest thing you've tasted without throwing it out because it went bad?? You also left out the most important nutritional point: chunk light is the only type considered 'safe' in terms of mercury content for regular consumption. Kind of really frigging important. It's because the fish used to make it are smaller so they have less time eating up all the mercury from smaller fish - the higher up the food chain you go the higher the content because it bioaccumulates. A giant fish like white albacore is going to have plenty more of it because they are both larger and longer lived.

Completely agree with all you've said. I have always preferred the TASTE of the LESS expensive canned chunk light tuna over the solid, white, more expensive albacore type of "tuna" for ALL different recipes. The solid, white, more expensive albacore is like eating canned chicken in ALL recipes for me. If I wanted to eat something that tastes like chicken, then I would EAT chicken. Whenever someone tells me they prefer the solid, white, more expensive albacore in any recipe, including sandwiches, they always look like they're trying to impress me in a snooty way, as if to say they are worth so much more than other, more ordinary people. In other words, their "puttin' on airs." Phony baloney stuff.

I used Bumble Bee brand for many years and tried Chicken of the Sea and finally Starkist. I have now been eating Starkist for many years. I found their tuna to be more consistent as color and firmness...also, all tuna, has a certain amount of bone splinters and an occasional scale. I found the other brand to have less of both. Most people wouldn't notice those by -products unless they eat from the can as i do. The cans state" White" and that's what I expect to see. Instead, see pink and, off -white. I believe that tuna should be labeled clearly as so the consumer knows that when they open the can that states, "White" it could be a different color.

White is used word used to describe albacore tuna to differentiate it from other types of darker tuna. Only an idiot would think they monitor it for whiteness. Are you gay?

whats skipjack tuna?
@BumbleBeeFoods
@BumbleBeeFoods 5 лет назад
+fofal Skipjack is a medium size fish from the tuna family. Most canned and pouch tuna comes from skipjack or albacore tuna. Light or chunk light tuna is most often skipjack, but may also include yellowfin, tongol, or big-eye. White tuna, including solid white albacore and chunk white, is albacore.
