Just made my first batch of barbacoa for Christmas morning. Smoked it with mesquite for a couple of hours and then into the cast iron for about five hours. If I knew how easy it was I would have made it long ago. Happy Holidays Arnie.
I smoked it on my homebuilt rig which is roughly the same dimension as the Weber Kettle. Fire on one side, meat on the other. My recipe was nothing more than seasoning the meat with standard BBQ rub. Salt, pepper, garlic. Approximately two hours of smoke. Then in a covered, cast iron Dutch oven in the oven at 225 for about five hours. As far as I can tell, it would be pretty hard to screw it up. @@quikeism
My mother in law taught me to make menudo and after years of trying to make it, I’ve now become the designated menudo maker in the family 😂 They’re from San Antonio and taught me with the menudo mix and it really does give the absolute best flavor! We also add pig feet in our menudo and all fight over it.
I learned how to make menudo from watching my mom cook for all 9 of us…..I also add pork feet to my menudo the bone marrow is what gives the menudo taste so much better……I add 4-5 lbs to 10 lbs of honeycomb menudo …..and plenty of hominy of course…..😋😋😋😋😋
I am just an old West Virginia underground coal miner that loves to smoke good food Arnie is one fellow I would love to a spend day around the smoker with
Happy New Year Arnie! I just discovered you yesterday and I'm enjoying your RU-vid videos. Thank you for sharing your recipes & cooking methods, and your style of humor. I miss Tex Mex cooking and appreciate your shares. Many blessings to you and your family this coming year. Raquelita in Virginia.
When my 72 year old brother was dieing of cancer all he talked about was wanting was menudo. We drove around Santa Ana calif one Sunday until we found a hole in the wall in a garage in a neighborhood where we stood out like a pair of raisins in a bowl of oatmeal. It was great. One of my fondest memories.
When I saw a closeup of your sisters hands I started to cry. That is hands of my grandma. My grandma knew how to make magic with her hands when maling food... Bless you guys. I wish you guys the best 2024. ❤
Lingua is my absolute favorite tacos and Ive just discovered within the past 4 years. Never thought of adding cheeks but now I have some Ideas! Thank you sir!
I don't have a roaster, so I just wrap the cheek in aluminum foil and cook it in my tamale pot. As he showed you, it just is so tender. I just discovered his channel.
When my husband and I vacationed for a week in San Antonio we ate menudo every morning at La Tierra to start our day. Pure heaven. It was a culinary vacation we will never forget.
Hi Arnie I’m from South Texas and my mom taught me to make menudo but we put pork feet and garlic , onion , and oregano or menudo mix , also cominos , peppercorns .
Great vid for sure wow!!!!! One thing I use is cruz spices menudo mix I used to always use Fiesta menudo mix but once I found that oh no I'll never go back.... I use the cruz spice mix and i also use about 2 tablespoon of WOW in it and geez its fire!!! Thanks again for the great vid
Thank you so much for this wonderful alternate way to cook two of my favorite dishes! I think I'll be adding a little Wow, cause it makes everything delicious! Haha! And by the way, Letty is beautiful! Thanks again! This was fun to watch!
Arnie when i go to the local Mexican market chain and I go to the butcher counter I ask for lengua and cheek and they always give me chuck roast. I've been told I need to go there in chefs clothes
WOW, I have always wanted to cook it, BUT ..............well kinda scared I might not clean it enough, or I would clean it too much ! ..........your recipe (Lety's) I will definitely try it . thank you
I'd like to see Arnie tackle the Complicated, Controversial, Complex and often very difficult to master dish of "Mole".(as a child my mom made it, years later I learned she made incorrectly)
Arnie, love your videos man, i'm a big fan of spicy food. But throw that jarred garlic away! Yuk. Always fresh garlic when cooking delicious food. I love spicy food and can't wait for June. My missus has booked us a flight to Dallas Texas, then going San Antonio through to Tombstone, Alburqurque, Lincoln County and Fort Sumner, back to Dallas, for my 50th Birthday. Trust me, there will be plenty of beautiful mexican spicy food eaten along the way. Thanks Arnie!
Hi Arnie, love your videos. How many pounds did you put in the crockpot? I'm a little confused in the time. Is it 6 hours on high and then 8 hours on low?
Hello Arnie, I love watching your Channel. I love the flavor of menudo however I cannot stomach the tripe. I'm from San Diego and I've eaten a lot of different animal parts I've had lengua I've had it all. it's just the tripe I can't handle. Is there anything I could use in place of the tripe.
Arnie. Your sister is beautiful, inside and out. I can tell she has a great personality, is a great mom and wife. All of us should be so lucky to find a life partner like your sister. ❤
This looks so yummy but I am so afraid to try tripe. I have yet to meet someone who likes menudo. They've all said it's rubbery meat. Are they just making it wrong?
