For the bazlama,
500 gr all purpose flour (~18 oz, 3 and 2/3 cups)
200 ml milk (4/5 cup, ~6,8 fl. oz)
100 ml water (2/5 cup, ~3,4 fl. oz)
3 pinches sugar (less than a teaspoon)
10 gr instant yeast (a heaping tablespoon)
A heaping teaspoon salt
For the pide with kofte,
2 kofte (Turkish meatball, check the comments for the recipe)
a handful of grated kasar cheese (You can use any kind of melting young cheese)
a teaspoon of butter
For the pide with mushroom,
8 mushrooms
3 stems of spring onion
3 cloves of garlic
4-5 stems of coriander
2 tables spoons olive oil
Salt
Black pepper
a handful of grated kasar cheese (You can use any kind of melting young cheese)
• Mix 200 ml of milk and 100 ml water in a beaker. The mixture should be around 28 C (82.4 F). If you use cold milk from the fridge make sure to add hot water.
• Add 3 pinches of sugar to milk and water to wake up the yeast faster.
• Add 10 gr of instant yeast to the mixture, mix with a wooden spoon and let sit around a couple of minutes.
• In a big bowl mix 500 gr of all-purpose flour and a heaping teaspoon of salt.
• Add milk mixture to the flour and give it a good mix in the bowl. Make sure you are using a wooden spoon because yeast are alive organisms and antibacterial materials such as steel might affect the yeast badly.
• When the dough starts to get together, start to knead in the bowl and always check the consistence. It can change from flour to flour that, how much liquid it can absorb so if it is too hard you can always add more liquid or if it is too sticky you can always add more flour.
• Take the dough on your counter top and start to knead with your palms rolling the dough back and forth. This will help to wake up the gluten faster.
• After kneading about 5 minutes, the dough should be smooth, elastic and not sticky; put the dough in to the bowl and cover with a plastic wrap. Make sure the film has a little hole to let the dough breathe.
• Let the dough rest around 12 minutes at a warm place and not windy. If your countertop has a cold surface like marble put a wooden board or a clothe underneath the bowl so dough won’t get cold.
• If your kitchen is cold you can cover the bowl with a kitchen cloth to keep it warm.
• After 12 minutes when your dough rises and doubled its size, flour your work surface and take the on it.
• Divide the dough into equal 4 pieces and shape them into balls. Try not to press too much and take the air out of the dough. Put the dough in your palm of the hand and round with the sides or fingers with your other hand to make a perfect ball. Another way to make the balls is turn the edges of the dough under itself so it will shape into a ball automatically.
• Because it is a faster version, we will keep the balls as much as fluffy we can. If you have time you can take the air out, shape them and let the dough rise again.
• After making balls press onto them to make bigger circles. Around 15 cm (around 6 in) will be enough.
• Cover the dough with a damp cloth.
• For cooking, put a stainless steel, cast iron or enamel pan on heat. When they are hot put the dough on the pan and turn the heat on low. Cook 8-10 minutes until both sides get light brown.. Don’t flip the breads before one side is done otherwise they can stick to the pan and make sure your cooking on low heat so inside can cook before the outside gets burned.
• If you want to bake them in the oven you can set the oven to 200 C( 392 F) on upper and lower heat before kneading the dough. Bake them around 15-20 minutes at the medium oven rack until they get light brown.
• Before taking the bread out of the pan, cook each side for a minute to make sure the center of the bread is cooked.
• Don’t forget, the rest of the dough will be bigger breads because of they waited more time than the first ones so they had time to rise more.
• The crunchy outside and soft inside, bazlama is ready. Cut in half and spread some butter while it is hot. Sprinkle some salt and black pepper and you are ready to eat the whole bread in seconds!

For the pide with kofte, • Set the oven to 250 C (482 F) on grill mode. • Cut in half a bazlama bread and spread a teaspoon butter onto it. Put a handful of grated kasar cheese on top and leave some room at the sides other wise when the cheese melt can pour from the sides. You can use any kind of melting young cheese instead of kasar, if don’t have any. • Put 2 koftes in pieces on top the kasar. You can use minced meat with herbs, chorizo, sucuk, pastrami, bacon or any kind of meat of your choice instead of kofte. • Put a little more cheese on top. • Put the pide on a wire rack and place it to the second shelf of the oven from top and cook around 5 minutes. For a vegetarian version of the pide; • Set the oven to 250 C(482 F) on grill mode. • Thinly slice 8 mushrooms, 3 stems of spring onion, 3 cloves of garlic, 4-5 stems of coriander. • Mix the mushroom with 2 tablespoons of olive oil. Add salt and black pepper to taste. Add sliced spring onion, coriander and garlic. • Put a handful of grated kasar cheese on top. • Put a handful of the mushroom mixture on top of the cheese. • Put the pide on a wire rack and place it to the second shelf of the oven from top and cook around 5 minutes. Grandma Kofte recipe, ½ kg (1,1 lbs) minced meat (plate, rib or brisket) 3 heaping tablespoons bread crumb 3 little onions A tablespoon yogurt or 2 tablespoons white wine vinegar 1 egg 2 tablespoons olive oil 15-20 stems of parsley 1,5 teaspoons black pepper 1,5 teaspoons salt 1,5 tablespoons cumin A tablespoon coriander seed A teaspoon red pepper flakes Half teaspoon cinnamon · Grate 3 onions or use food processor for it. Make sure that onions are not pureed. Small pieces will be perfect. Puree makes kofte mixture too loose. So it can stick to your pan. · Mix ½ kg of minced meat, onions, 1 egg, 3 heaping tablespoons of bread crumb, 2 tablespoons of olive oil, 1 tablespoon of yogurt; you can use 2 tablespoons of white wine vinegar instead of yogurt in a large bowl. Yogurt, vinegar or any acid helps to tenderize the meat. · Add 1,5 teaspoons of black pepper, 1,5 teaspoons of salt, 1,5 tablespoons of cumin, 1 tablespoon of coriander seed, 1 teaspoon of red pepper flakes and half teaspoon of cinnamon. · Knead the mixture around 7-8 minutes until the meat and spices are mixed very well. · Add finely sliced 15-20 stems of parsley and keep kneading a bit more. · Cook a small ball of kofte to taste; if it needs, add more salt or spice according to your taste. · Divide the kofte mixture into 15-20 balls and press them to flatten. If you want, you can make other shapes as well. Press them between your palms and fingers of your both hands. Be sure that they are not loose. If they are loose, it will be hard to cook. You can add a little more breadcrumb to make the mixture less sticky. · Put a cast iron pan on medium heat. When the pan is hot, place the koftes in to the pan. · Don’t flip the koftes before one side is cooked, otherwise they can stick to the pan and fall apart. When they are cooked, it will be easier to flip them. A couple of minutes will be enough to cook each side of the koftes. · Rest the koftes for another couple of minutes before eating. Voila! You are ready to eat Turkish grandma kofte!

The interior texture of the bazlama bread reminds me almost of an American biscuit (which is about one-third the size of the bazlama), which I've recently learned is similar to Australian damper bread. The difference is that the American biscuit and the Australian damper bread are both quick-breads, instead of yeast breads; plus, damper bread is often made as a small loaf, equivalent to about 5 or 6 American biscuits. When I make USA hummus I use seseme seeds I can chickpeas few drops of seseme oil and garlic in the blender. Every one likes it. Not authentic. But for working mom it works. Better then store bought. A little lemon. Love your program.......learning alot. I am a totally non Turkish cook.

I made my first ever bread yesterday with some dry thyme (I extracted some thyme flavor in olive oil and water because dry thyme didn't give taste in bread before when we tried with my mom) and it was very good. We all loved it. Ate it with the first tomato sauce I have ever made and the sauce was also delicious.

I like your videos, and I love you too because you teach simple ways of cooking. I'm a vegetarian, and you dont use eggs, that's a plus point. I hope you've got pita bread recipe, because your first video I watched was of Hummus. I like your culture and the food. Thanks to both of you lovely girls. And if we can do baking in rice cooker, please let me know because I don't have a microwave or an oven. I want to try rice cooker for baking.

Great stuff! I cooked bazlama on two occasions already and I am so happy with it. 1. It's so easy and fast to make it. It eliminates tje biggest problem of breads - time 2. My gf is Turkish (we don't live there), so I can bring her a little bit of home feel :)

@@jrt1776 you may not familiar with turkish people well 'cause we turkish people look much like refika, her mother and bahar. Most people dont know our country and assume that turkish people look like arabic, syrian, or other middle east people. But we much more close to mediteranean look :) best regards...

Hi Refika...thank you for very interesting recepies and a great introduction to amazing Turkish cuisine. Just two comments...yeasts are not bacteria...they are Fungi and although they are used in sourdough fermentations with bacteria, you used Saccharomyces cerevisiae...bread yeast (this is not just semantics...they differ in so many things). Another thing is the usage of stainless steel in the kitchen...it has no negative effect on yeast since we use it in food preparation and storage as well.
