Fuck yeah man! I’m a Rochester local and you nearly hit the nail on the head! The beef chili sauce you were referencing is more of a meat hot sauce (as we call it). Just mainly consists of ground beef, a little chopped onion, some garlic and a bunch of spices to help boost the great flavor. And we mix and match the key components around here all the time. Like some people put baked beans and fries on for substitutes, it may not be traditional, but we don’t discriminate against it! Great video man, glad to see our food culture is making its way around!

As a Garbage Plate native, you're close as you're going to get. The hard part is the "hot sauce" as it's called, it's not quite a chili it's more like coney sauce. The rest is accurate, you can do a lot of options for the taters. I prefer normal fries myself.
As someone who was born in Rochester and moved out of state I cannot tell you how GEEKED I was seeing you chow down! I miss those think I outta make my own now!

It’s definitely not authentic as we would never put chili on a garbage plate, it’s actually a beef “hot sauce” that one of my relatives actually created the original recipe for fun fact. Love that you had it as a hangover cure as that is THE PERFECT use of a garbage plate. I think it’s amazing you shouted out the city #585 and gave some love to the garbage plate. in school I used to mix the whole plate on hot dog days. The hot dog goes first then any condiments I use mayo and mustard. Then you put on mac n cheese, backed beans, and cold slaw. Top with fries if necessary. My favorite thing to eat during the summer.

ROCHESTER GANG 👐🏻 Tator tots are a common option on garbage plates (I go onion rings sometimes) but it’s ALL about the meat hot sauce, Best part about a garbage plate is that you can have it any way you want it though 👌🏻
You're absolutely right about that being a Rochester, New York thing (I'm from Syracuse, New York). I think the origins are because of the colleges. A whole lot of cheap food piled on a plate that was filling, somewhat nutritious, and easy for students to afford. Especially after a night of hard drinking. 🍻 PS: You forgot the hot dog. 🌭
Yo Ben! Rochester native here. You did pretty fucking good! The chili is actually supposed to be a meat hot sauce, of which recipes vary and its greatly debated over who has the best in town. That's probably why you were craving hot sauce on it...its sposed to have a kick to it! Ketchup and mustard and raw white onions criss crossed over the top is the works...and tots are totally one side we do all the time! Most places you can pick from a variety of fried potatoes...its up to a personal preference. A lot of places offer different meat options as well...hot dogs or sausages...some places have steak or fried fish or shrimp! Thanks for the shout out dude. So glad you did this video! I remember hearing about the garbage plate from a couple of Xbox Live friends from the Rochester area circa 2002 or 2003. I just thought it must've have been the most amazing thing and they said it was delicious! I've always wanted to try this, but never been to the New England area at all. Thanks, Ben!

If you ever come to Rochester make sure you get some real garbage plates. Nick tahous is the original. Dog town has an awesome one, as does bill grays. Rochester is full of local delicacy’s that you can only get there. Lots of history here!

A traditional "Garbage Plate" consists of cheeseburger patties, hamburger patties, Italian sausages, and/or white or red "hots" (high quality traditional hot dogs or white ones composed of a combination of uncured and unsmoked pork, beef, and veal), served on top of any combination of home fries, french fries, baked beans, and/or macaroni salad. The plate is usually topped with “hot sauce” (Rochester "hot sauce" is a spicy meat sauce, you can find recipes online). Optional mustard and/or onions may be added on top. Typically served with a slice of buttered white bread on the side (to sop up with).

Rochestarian here - the basic meat sauce recipe is: Beef - you want it to be very fine (it's made with pan scrapings in the restaurants) Salt, pepper, garlic powder, onion powder, all spice, cumin, clove, cinnamon, and cayenne. Fry your beef + the spices, medium heat. Add a little bit of tomato sauce/puree/ketchup. Take your pick. Then add water. Bring to a boil, then let simmer for a while til the sauce is the consistency you want. Some restaurants make it thicker, some make it runnier. Each restaurant varies their sauce recipe, so feel free to customize - but this is a middle eastern inspired meat sauce that is meant to be kind of earthy and slightly spicy. It's NOT your typical chili sauce. Things typically added on top of the sauce: Raw onions Pickles Hot Sauce (Franks is great) Plain yellow mustard Ketchup Additional spices to try adding: Garam Masala Curry powder Berebere (African Spice) Any chili powder
