Tarihi Ismail'in Has Ekmek Firini
It was established in 1840, making it one of the oldest bakeries in Istanbul, Turkey.
The size of the oven, the amount of bread, and the method that heats the room where the dough is prepared are all fascinating.
One of the artisans, Mr. Fahri, a baker, taught us about the bakery, the state of bakeries in Turkey, and their history.
Why Turkey?
1. Turkey is the world's largest bread consumer
The annual bread consumption per capita was recognized as a Guinness World Record in 2000 with 199.6 kg per capita per year.
2. Turkey is considered to be one of the birthplaces of bread.
The ancient Mesopotamian civilization gave birth to bread. Southeastern Turkey is part of that civilization.

The bakers trade is a tough "calling". I know being a retired baker by trade myself. These are men of the highest order, that feed Turkey's working poor's appetite for good bread. They are the pride of that country!

Wow….. Incredible from every aspect, dedicated, hard worker’s The bread looks so delicious! I live in the USA….. A large majority of our society would not be able to bare the weigh of the stories being told. The displacement in another country alone would have crushed me. Learning a new language and culture is an incredible accomplishment. Bless your hearts and that may you find joy in your life. Truly an awesome example on why life should be appreciated. Thank you!❤

Let me give you some information about Turkish breads. During the Ottoman period, it produced two types of bread: round, long and thin. A cross was drawn on the round bread to indicate that this bread was made in a Christian bakery. The customers of this bread were mostly Christians. Thin and long bread, on the other hand, was cut with a thin line from top to bottom, like the letter elif, the first letter of the Arabic alphabet. This was also known as Muslim bread. They were made the same but tasted different, then everything got mixed up and the values were forgotten.

Muy interesante, se ven los panaderos muy contentos, son bromistas. El pan se ve de mucha calidad, hacen un pan perecido al birote de Guadalajara México, la panadería muy ordenada y limpia, los felicito porque tienen un excelente producto que la gente compra con gusto.

とても興味深く拝見しました! アフガニスタン人の方々はトルコで本当に身近な存在です。 そして、日本人だと分かると中村哲氏の話になります🙏 カッパドキアのフルンはほぼ全店薪で焼いていると思います。 天然ガスが引けてからまだ10年経っていないし、ガス代が高いからだと思います。 マヤは何を使っているのか訊いておきます。

最初は楽しそうってみてたけど、アフガニスタンの人の足の裏が真っ赤になってるのを見て大変な仕事だって思いました。 大きな深さのある窯見ていてとても楽しかったです。

Many polish families making bread at home. Historical we used PŁASKURKA, ancient grain. And ofc sourdough is main ingridient. Making sourdough is simple as hell. Make bread - not dead \m/ 😜

They are called pide. Especially in ramadan month they are stable at dinner times. But in some bakeries you can find them year around.

Ramazan pidesi (Turkish for Ramadan pita) is a traditional soft leavened Turkish bread. Round and rather flat in form, and having a weave-like patterned crust, Ramazan pidesi is made of wheat flour with yeast, and topped with sesame and Nigella sativa seeds. It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.

They are called "Ramadan Pita" (Turkish: "Ramazan Pidesi") It's produced only during Ramadan month in a year. Otherwise, it's so rarely to find it anywhere. It's used as a bread as a side-dish; but as a replacement to a typical bread during the Ramadan month. It's like a treat for Turkish people at the end of the day; when they finish their daily Ramadan fisting.
