The Lapu Lapu is a fine drink, but even more interesting is the story or lack of story around its creation. Most tiki cocktails point to a specific creator or moment in time, but occasionally we come across drinks with origins unknown. I just wanted to make a Lapu Lapu since I've had a couple of them at the Royal Hawaiian in Laguna Beach and as I tried to keep things simple I ended up down the never-ending rabbit hole that is the Lapu Lapu history.
Jeff Berry shares in Beachbum Remixed that the drink creator is unknown, and while that still remains the case at least as of the time of posting this video, it's possible that more information is out there that just hasn't been found. And that's common when looking into history, especially cocktail history. Some new information could come forward at any time or something is already out there just waiting to be found. But since Berry is so familiar with Ray Buhen and the Tiki-Ti, I'd image that if Ray did create the drink it would have been something that was known. The menus from the Tropics are not dated, and I'm no expert on which menu may have come first or when the Lapu Lapu first shows up on Sugie's menus. From what I found, the Tropics is the first place to feature the Lapu Lapu cocktail with a menu you can easily find online, but I can't imagine Sugarman would have created that drink or any other drinks himself.
Francis Cabang and his partner Harold "Hal" Hanna opened the Royal Hawaiian in 1947. Cabang was born in the Philippines but I don't know much about his past. He was already living in Orange County by 1940 but I'm unsure of what history he had in bars or restaurants before 1947. The naming of the Lapu Lapu from The Tropics to the Royal Hawaiian could also just be a coincidence.
So who really was the bartender behind the Lapu Lapu? Was it someone who had a connection to the Philippines, The Tropics, and the Royal Hawaiian? My guess is yes, but we may never know.

Lapu Lapu
this is not a historical recipe, but a tribute to the Tiki-Ti and Royal Hawaiian
½ oz lemon (15 ml)
½ oz lime (15 ml)
2 oz orange juice (60 ml)
1 oz Passion Fruit syrup (30 ml)
¼ oz simple syrup (7.5 ml)
1 ½ oz light rum (45 ml)
1 oz pot still (30 ml)
1 oz club soda (30 ml)
¾ oz 151 (22.5 ml)

Derek, I LOVE this video! The deep dive on the history and the images you use are amazing, makes for a great watch so thank you for the quality of your videos. Also, I’ve tinkered with this one and my proportions are 1, 1, 1.5 oz of Lime, Grapefruit and OJ. I hump up the passionfruit syrup by .25 Oz and take down the Demerara syrup by .25. I’ve used a Cuban Rum (Havana Club) as my base and then the same Hamilton Rums for the Jamaican and float. My twist on it is a little more tart but with the club soda, it’s just how I like it!! I hope you give it a try. Enjoy!

Great video. As someone who was there w/Dushan working on the Tiki cocktails @ Royal Hawaiian I can say w/100% certainty that Dushans twist or riff on the Lapu Lapu was truly fantastic & one that people must try!

I've been to the Royal Hawaiian all my (drinking) life, including all the remodels. The Lapu Lapu's were legendary. I was stoked to see the recipe in my original Grog Log, and yeah they were always STRONG and the recipe was SECRET. Ive been hoping you’d make this one! No recipes I’ve seen have seemed that appetizing… so much juice in it. This one looks great - going to make it as soon as I can get a fresh passionfruit for the garnish. Have you thought about acid adjusting this one so as to use less citrus?

There's a descepency between the recipe in the video and the one in the description. In the video, you call for 1.5 oz of pot still, and the recipe calls for only one oz. I defaulted to the larger one, of course. Delicious! *hic"🥴

I noticed you had a strainer on the mixing tin as you poured the fruit juices. Something I hadn't seen before, and I get the idea, but isn't that texture part of what sets tiki drink apart and why they aren't normally strained?

Ultimately it's preference. I don't like pulp from orange or grapefruit and my juicer can make a lot of pulp when you half or quarter the fruit. But I also use it in case of lemon seeds since I know I'm not straining it later. Most bars will prep their fruit juices and some might strain, some might not, but depending on how you juice and what kind of juicer you use you'll get various amounts of pulp.

I make my own using Funkin puree with a 2:1 simple syrup, which is the Smugglers Cove recipe. But I've also bought passion fruit syrup or made it from frozen chunks and they all work out well.
