Money tip: back as a poor uni student- I used to go to farmers markets just before closing- they would sell boxes of random vegetables and fruit for extra cheap because they didn’t want to take them home or waste them- back in the day (10years ago to be fair!🤷‍♀️) I used to get a weeks worth of seasonal vegies for about $2 AUD.

THANK YOU!! We can make this for pennies with what we grow in our garden. We already have chickpeas, peppers, onions, garlic harvested and we are about to harvest sweet potatoes, and peanuts within the next couple weeks. We have tomatoes stored back in the freezer and they are still producing. With the transition into the fall gardening, we already have both spinach and cilantro growing and will be ready to harvest at a similar time. Thank you for putting this out now so I have the idea to use here over the next couple of weeks. This is the exact type of dish I look for when trying to maximize my efficiency in our kitchen with what we grow ourselves and only purchasing a few items. BRILLIANT! and so very appreciated!

@@patgaston6564 we are in Ohio zone 6a. This was my first year growing chickpeas. While they needed a long time (100+days) I had time to grow and let them dry on the plant in my area. I'm a relatively new Gardener and had success with them. We will be growing them again.

Fun fact! If you get food stamps, you can apply them to seeds and starts for edible plants, including fruit trees. Or you can save the seeds from the veggies and fruits you buy, dry them, and plant them at the right time.

Just one comment - when soaking your own dried beans, bear in mind that some, like kidney beans, *require* soaking, boiling in clean water, then boiling again in another change of water to remove toxins. It's fine to use chickpea water, but please research which bean you're using to ensure you can do that - follow the soaking and boiling instructions for each bean individually!

Parsnips, potatoes, turnips, carrots, kidney beans (soaked for a long time, of course), green beans and corn, all combined to make a super good stew. I do add cheeses because I like them, but also I cannot have alliums in their whole/natural form, only powdered, and the cheeses hide the fact that the powder is used.

I like that he added nuts to the top after mixing peanut butter in. For people with nut allergies like me, I appreciate nuts staring at me on the top of a stew or soup telling me “stop!” Versus being surprised after the first bite when it’s a hidden ingredient!

Not a huge fan of African peanut soup but I love your concept here! I do a butternut chili that can also be subbed with sweet potatoes. It’s all about what’s in season and what you have in the pantry.

I like the meals, but I don't think, that the condiments from restaurants are better than buying spices, because you'd need to eat at these restaurants quite often.

If you want to add plant based creaminess to a dish you can over steam cauliflower until it is very tender and then blend that up. It is a great plant based way to add creaminess to dishes like soups and stews (even a way to make an Alfredo).

Just one note. I found that adding tomatoes to something with sweet potatoes makes the potatoes take longer to cook. I do better if I cook the sweet potatoes to near done first.

The potatoes wont take longer but the beans surely will! Cook those beans off first and then add to stew.

Bingo. If you want diabetes (blood glucose over 100) then eat the grapes. Otherwise, stick to fats and animal proteins with lots of leafy greens and other fibrous vegs.

True or False? Eating fresh & seasonally... i) Many produce we get from the supermarket are flash frozen for upto a year (ie; apples). ii) chickpeas/beans, canned, stock are all stored from months ago, of not years.

Shouldn’t u mention that the cooking of beans and sweet potato must be done on a simmer with a lid on the pot? Otherwise theres no way the beans will be tender in half an hour, unless u used canned ones.

Hey so I am trying to think of what role the peanuts take on in this recipe. I feel like they are there to vary the texture, more than for flavor(if you look up the recipe for African peanut soup they are cooked and mashed/blended but the peanut is the main flavor, think of it like a butternut squash bisque). Seeing as they are for crunch, these are things I do for that portion of my soups: halfway through the potato cook time, you can add diced rutabaga. It will still be firm, but be cooked enough to eat. I usually do something similar to this recipe, but I use white/red potatoes, and half way through the cook time for the potatoes, I add baby carrots and rutabaga. 10mins before serving, I add sliced celery, and 5mins before I add frozen corn and dehydrated kale. Try it :)

If you aren't allergic to all nuts, you could substitute almond butter or cashew butter as an easy alternative. SunButter is a made from sunflower seeds, and many people who are otherwise allergic to nuts can have it.

Semi false, false, false. Plant based food may be cheaper, but most of it makes me ill in so many ways (fibre causing constipation, blood sugar, mood swings, etc) and the meds needed to control that are horrible for the planet. Pork is cheap. I eat it and I feel just the same as eating beef, which I prefer. The taste sucks, but it's cheap. Beef is better for the planet than pork though because cows are a specific sort of herbivore.
