Some video's they explain more about what they are doing and why. I would love to hear like about the big plank you set aside in the end. I also think that is an AMAZING fish table. I want one... no fish around here half that size but I want one!
Actually he was cutting up several parts to make some stock. Good job on what he was doing. Not much waste after he makes several stock's with what he is doing.
I love all the "expert" opinion on how this man is destroying the fish. I bet this man has more ways to use everything then all you guys put together. As far as the water goes, he probably has well water, cleaner then anything we can get in the lower 48
Any fresh water should never come in contact with a salmon fillet. It is not the purity of the water that is the problem Fresh water is hypotonic and causes the cells in the flesh to burst and advances spoilage. Unless this fish was cooked immediately I would not want to eat it unless I was very hungry. I learned these things from a third generation King Salmon fisherman when I was his deckhand 26 years ago fishing for King Salmon out of Sitka. . He would likely roll in his grave if he saw this video. When I commercial fished in alaska trolling for King Salmon. It is simple. Blood no good. Guts no good. Fresh water no good. It also looks like the fish was never buried in ice after the catch.
If you have ever seen a fish processed by a professional or a knowledgeable sport fisherman you would actually cringe seeing this video. Clean? There was blood and intestinal goo all over the meat.
Edward Dergosits lol, dont think this video is complete version of the whole process. You cant judge just by the partial of whole process. Well anyone with a well-developed common sense will definitely clean up everything before they consume it.
You entirely missed my point. Salmon should be bled while their heart is still beating and after that the gills and guts should immediately removed. The fish should then be buried in ice. When it comes time to fillet them their is no blood or guts to contaminate the flesh. Freash water should never be used to wash a salmon fillet. It you bleed and gut the fish when it is caught there is no need to wash the fish.
Not sure if you are being sarcastic or not. If not I am glad you saw the video in the link I posted and now know how salmon should be properly processed.

Could he have cut it cleaner, yes. You see the size of it and the amount of meat he’s getting? If he’s using the leftover for stock then no waste at all.
I feel like people are only here to start arguments, i don't see alot of other people giving him a good complement not for these "Professionals" tell him he's fucking everything up and is wasting alot.
The fish should have been bled and gutted at sea. When this is done their is no need to wash the fillets because their is no blood to wash off. Using a good fillet knife to severe bones is a very good way to ruin it.
There's no point to cutting the head off, and the fins, like that, IMHO. Also you cut right through the chest bones and left them in there. There's no way that's done dude.
Wrong, minimum waste as it looks like he is going to cook the spinal bones with the meat on them, probably smoke them or something, you can tell because he portioned them and cleaned the blood line out of them. It also looks like he had used the head as he didn't discard it like he did with the innards
Fish stock .. Fare does.. should not have been so harsh ,and suggested a good wooden board for the knifes sake..:) lots of ways to fillet a salmon . this the easy way and does a job .. i stand corrected , .. but the name of the video suggests a king of filleting :? if it were the case then id suggest ,just an amateur , Me personally i fillet them like a cod = more cuts .but yeilds of 70+ % i still use the heads and bones for stock and nothing to waste .
