It is amazing how street food in India has changed in the last decade or so. I do not recall eating butter or cheese or very sweet yogurt on all items except butter on pav bhaji, cheese in cheese sandwich and yogurt on dahi chat or dahi puri. Now they cannot make anything without one of these items.
Whenever I read sign board of khijadiya while traveling jamnagar, it reminds me of u nikunj. I wish I could meet u someday. You are inspiring millions and millions of people to live simple life. Someday I'd also wish to live like this. God bless you and keep inspiring. Love u buddy ❤️

Thanks for sharing the growing cycle of spinach. palak paneer and palakura pappu (spinach dal in case you do not know Telugu) are my two favorite spinach dishes, but I am also partial to spinach on pizza and in pasta (a garlicky, spinach pasta with lots of crushed, dried laal mirch and good olive oil is awesome). Aloo palak also is damn good.
I love the tranquility in your surroundings! The way you cook with basics but still produce some really amazing dishes is super! I only I was there eating the food 😊
