I love how John doesn’t pretend that baking and cooking is always a clean and perfect process. I’m also not great at cleaning as I go. The kitchen always looks like a storm blew in when I’m finished

Finally I see someone else take out the excess moisture in pumpkin puree, makes a huge difference in cookies! Pumpkin oatmeal cookies are also amazing when you do this.

John, these cookies have become my dad’s favorite! He is 90 years old and for Father’s Day I made a Cookie jar for him. I am filling the jar with these cookies. Each month for a year he will give the jar back to me and I will bake more cookies for him. He will choose the cookie and I have a feeling it will be these!😎. I wanted you to know this because your recipes do more than give us the opportunity to create yummy food! These cookies feed the soul for me and my 90 year old dad!❤. Hi John. One cake I know has cardamom as a very defining flavour is the Indonesian kueh lapis (also called spekuk), a very rich cake made of layers of light vanilla and dark spiced batter, but it will take hours to make as every layer is baked in turn. Just like your (amazing) cookies, the spices are to taste, but traditionally it has cardamom in it. I don't have a specific recipe for it, unfortunately, there are many versions of it. I'd love to see you cover it in a video.

I just tried this recipe after taking a stab at making my own pumpkin puree and omg are these just so amazing. This is exactly what I want when I think about any kind of chacolate chip cookie, it's soft chewy and perfectly sweet. Thank you for this recipe it will become a staple for me!

there is this Persian cupcake which is my favorite as I grew up with that..it has cardamom and rose water...AMAZING...since you were asking about a cake with cardamom. You may want to try that

Persian love cake is one of my favorite cakes to make with cardamom! A beautiful blend of almond, cardamom, rose and a touch of lemon. It's topped with a light rose icing covered in chopped pistachios. Heaven!

I just made these and they are absolutely scrumptious. I made them vegan by switching the butter for a plant based alternative and also baked a red kuri squash in the oven instead of using the canned variety. Super soft, cakey and slightly fudgy. 10/10 would recommend.

These were absolutely delightful and the spices were not overpowering. I used the paper towel to get the liquid out as your recipe suggested. Otherwise the pumpkin went right through the sieve. So thankful for this recipe that will become a fall favorite from now on.🍁🍂🍪💖 I think I’ll have another please. 😋

YES! Finally, an incredibly delicious chocolate chip cookie. I made these tonight. Your words in my head... use the scale for measuring flour. My oven may be a bit less efficient, I cooked them for 15 minutes. The spice combo is perfect. They are delicious. A new family favorite.

best pumpkin cookies I've ever made, really important to remove the liquid from the pumpkin to avoid a cake-y texture. also made the mistake of not using fresh baking soda/powder so the cookies didn't rise but still decent. great recipe!

My mum used to make a cardamom cake. It was just like a Pound Cake, with ground cardamom (not pods) added for flavour. It's nice with a thin glaze of preserved ginger syrup icing.

John, first of all, let me start by saying I genuinely love watching your videos! You are so real in your videos, and I love your educational nuggets of info. I think understanding the science of cooking/baking is essential to being able to branch out to create our own special recipes. I tried your recipe today and I went ahead and added the egg (I know, I know - I just couldn't resist a cakey-er cookie!), and they were phenomenal. I also only did brown sugar, and accidentally did less butter (~117g, but then added like 1/2 tsp of avocado oil). My boyfriend enjoyed them as well! I am adding your recipe as a yearly favorite now. I hate pumpkin, but my husband mentioned one day after I made cinnamon rolls that he had hoped I made pumpkin cookies, the very next day you posted the video on how to make them and then the day after that you posted this video, so I Thank You for this because I was looking for a good recipe to follow ❤️💙 Edit: A month later I've made them, he didn't like them shockingly, but I decided to try one and I actually really enjoyed it. I think it's definitely a one cookie only, as too many would be too much, but I didn't hate it and I'm proud of that fact. One day later: Okay, so I caught my husband eating the cookies and called him out on it, he admitted they're not as bad as he claimed. I also just ate four with some milk and am forcing myself to stop. They grew on me pretty quickly.

This recipe looks so yummy. I can’t wait to try it. I make an Orange Cardamom Olive Oil cake that is delicious. Your profile is a whole mandarin orange, skin and all, in the food processor.
