Love this video! Brought back a lot of memories. At one point I was the lead grill cook at Pok Pok (Kai Yang, Sateh, Sai Ua, Gung Op Wun Sen....) and finished out my time with the company as the KM of Whiskey Soda Lounge across the street. Most demanding kitchen jobs I've ever had, but I've nothing but respect for the standards and the miracles we pulled off on a daily basis.

Glad you guys like Thai food... Essan Sausage is from Essan (NE Thailand)... northern Thai sausage is Sai Oua (from N. Thailand - usually Chiang Mai region) :)

Kudos to Pok Pok's maestro; the menu here is a very fine selection of Thai street food, some of which inspired by or even straight up transferred from neighboring countries. The pork belly curry's 100% Burmese while Satay is Malay & Indo masterpiece. Those Isan dishes do not usually served side by side with Northern Thai ones like the noodle in curry, but both mingle well with the spicy salad which is Central Thai. Andy surely knows what he's doing! Salute from a Thai living in Chiang Mai!

I ate there at lunch recently and got the chicken wings. I was so disappointed. They didn't have a lot of taste and appeared to be leftover from the day before. They were also cold. But maybe that's how they were supposed to be. It was busy and I decided not to say anything, knowing that I should. Nice concept restaurant. It just wasn't executed very well. Maybe in the two years since thus video came out the restaurant has gone down hill.

It's a cuisine based on Northern Thai, specifically chaing mai. There are some Issan dishes but Andy gets nearly all of his ideas from Northern Thailand. Issan means Northeastern and it's a region of mostly Lao and Lao/Thai mix.
@williamcampbell4876
@williamcampbell4876 3 года назад
I went to Thailand 4 times, 3 months each time. Northern is best. Just one question. In all that time, I never once saw Thai restaurants or people using chopsticks. Why then, do so many USA tv shows show Thai food served with chopsticks?

I have been to Portland Oregon so many times and there are only two restaurants I would have to go every time. One is Pok Pok, and the other one is Saburos sushi. Saburos usually has a long line so we usually go there 30-45 mins before it opens and wait in the line. I have been to Japan couple times and I'm telling you Saburos is comparable to one of the best sushi restaurants in Japan.

Hello FB, this restaurant is I think about a full 10 years old. They first opened a wings place in NYC lower east side afterwards. Remember long lines and only take out. Think the restaurant's entrees were meant be similar to Thailand's street food. The chef took time to learn. Was there a papaya salad - that was a really one there. Elle for rice dessert

Hey Fung Bros., just a point of clarity - most of the food at Pok Pok is Northern Thai which different from Isaan food which is Northeastern Thai. But I get it - some people think all Chinese, Japanese and Korean is all the same as well. You are correct that Pok Pok is exposing the masses to more non traditional Thai flavors. Being Thai, Pok Pok is serving real deal food. Andy Ricker is aware of more authentic flavors than most Thai restaurants.

For y'all commenting that they're lacking the vibe or something or y'all think they're not what they were used to be bcs of this discount Richie (?) or other guest or solely bcs there ain't Richie there... Well I don't think that way. I don't think they're lacking the vibe bcs of no Richie there tho. For what I feel after watching their food vids recently compared to their previous vids esp comparing to top 3 vids (Fish n Chips, Halal Guys, Carne Asada episodes --> well it's my version tho, maybe you have ur own best food vids version), I feel it that the 'raw' excitement is quite lacking recently. Well that's hard to describe, but yeah it feels sorta that way. I also like they way they do the talk with the owner, giving some sorta info abt foods they tasted, not only abt the taste but also the background info like short history abt the foods itself (like how the Indian Food episode where the guest described the major difference between the north & south Indian cuisine, also the one they've had in fish n chip vids abt type of fish best used for fish n chips, it's pretty good to know that as for me I do like trying & enjoying foreign foods, it's part of learning the culture.... in tasty way lol) Well about Richie, there was an episode when there was no Richie in it but they still good, it was when they went strolling aroung NY hidden best places to eat with 3 or 4 friends (of mixed ethnicity, where one of them gave recommendation of places to eat foods of their nationality, it's pretty cool episode!). So, I don't think it's bcs of no Richie there. I do hope they can get their vibe back, cause when I went to States for the first time in my life, which was last year in October for a competition I would attend in Boston, I decided as my first food to 'welcome' myself is the Halal Guys (mixed chicken & beef + biryani rice) they recommended in NY. Tbh it's something that I expected it from the taste, the atmosphere, the interaction I did with the Halal Guys crews, why? Because that's the way I watched it in their video, so that way I once thanked them via Twitter, cause they're right that's one of the way to enjoy NY. So yeah I do really hope they can bring back the vibe & excitement I once used to see in their vids, but if it's the way they change, I hope they change for good. I'm still grateful for the Halal Guys recommendation, that's memorable, man. Thanks for that. Cheers, Your food vids fan from Indonesia :) #fungbrosfoodvidssinceday1

The Gai Yang looks like Isaan (North East) style. Moo satay (not Muse Tei) I think is Southern Thai influenced. The pork curry looks like Gaeng Hang Lay which is Northern Thai and so is that sausage (Sai Oua). 555 "Hoi Twat"... Hoi Tod... Central Thai, Chinese influenced. So Pok Pok does all food from the main regions of Thailand and not pure Isaan.
