I have always loved palabok as a kid, more than pansit, bihon, and other noodle dish but sadly it's the least cooked noodle dish in our household. I miss the old days when the palabok noodles aren't this big though
I was first introduced to palabok by a Filipino friend. He made the best palabok. And that was my first taste of it. Until now I couldn't find a better one than his. It my favorite of all time.

Pancit palabok was always the dish I requested. When I've hospitalized, I'd ask my bantay to buy me some palabok since I was gaining back my energy and craving for it. I miss eating Palabok so muchhh 😩😩
Palabok is my favorite filipino noodle dish since i was little. We had a special serving dish that had the center bowl for the sauce and curved bowls surround the center sauce bowl. the curved bowls had all the toppings such as toasted garlic, crushed chicaronnes, green onions and chopped boiled eggs. I loved it because it so much variety of flavor and textures. As for dessert, my favorite is gintaan. Both my mother made. My father was an excellent cook as well, he make is special wet pancit with two types of fish cake both the white/pink and brown, chinese sausage, bibingka(the kind thats rice saturated in brown sugar sauce baked over it).
This is a delicious dish and a must try. Even the country's most well known fast food Jolibee has it in their menu. A fast food like version but not as good as other restaurants but decent enough.
we've been using pancit and spaghetti for celebrations when I was a kid, and I don't eat spag so my parents make sure to have pancit whenever they're the one arranging the celebration. I'm a very picky eater and when I tried palabok, I surprisingly liked it so since then, we always have palabok instead of pancit and spag to save money and to have lesser chance of leftovers because after pandemic, it is not that much customary for our new neighborhood to give food to neighbors unless we're really close to them
We put prawn, roughly ground pork crackling, boiled eggs, chives or spring onions, fried/burnt garlic as toppings. Sprinkle with fish sauce and kalamansi. Suuuppper delicious. Yum Yum. It should be sold everywhere.❤❤❤
we have a different version that we usually cook at home. you replace the minced pork from the sauce base with Knorr pork cubes, dried shrimp and strained canned squid. adding Coconut Milk is also an option but I'll leave it to your preference. serve it with finely crushed Chicharon, chopped spring onions if you wanna get fancy and a little bit of Calamansi.
And there this kind of chicharon, that was called 'chicharong buhay' cuz it is literally swimming on its own lard. That is one missing on Palabok nowadays.

Palabok is one of my favorites! 😍 But I prefer Pansit Malabon. 🥰🙏🏼 As a kid, I’ve always hated Filipino style spaghetti, I prefer palabok or pansit Malabon even back then. Now that I’m 34, nothing has changed haha! I still hate Filipino style spaghetti, and I still LOVE and adore palabok and pansit Malabon 🥰😍🤩
